Caribou Bacon Wraps

Here's a quick and easy appetizer to try with the caribou meat you harvest on your Webber's Lodges caribou hunt!

 

Ingredients:

1 lb caribou meat

1 lb sliced bacon

Cream cheese  

Sliced, pickled jalapenos 

 

Directions:

Cut caribou meat into bite size chunks.  Take approx. ½- ¾  tsp chunk of block cream cheese, 1 sliced pickled jalapeno, wrap with ½ slice bacon, secure with toothpick.  Barbecue just until bacon is done.  Enjoy!

 Successful spring goose hunt at Dymond Lake Lodge
We had another superb spring shoot at Dymond Lake Lodge last month.  Two of our guests, Randy Thomas and John Van Ruiten had a very successful week shooting snows and blue geese, as is evident in the photo below.

John Van Ruiten and I had the opportunity to shoot the first five days of spring goose season under the direction of Doug Webber at his well-equipped lodge on Hudson Bay. As we crossed the ice by snow mobile, we came upon a large concentration of geese. Turns out this large concentration of both snows and blues was very close to the cabins that comprised the lodge. The Qamanirjuaq caribou herd

Webber's Lodges enjoys success rates of 100% for our caribou hunts year after year.  This is due in part to the strong numbers of the Qamanirjuaq caribou herd and also due to the fact that our
caribou camps are right in the migration route of the herd.

While some herds in Canada have been experiencing population decline, the Qamanirjuaq herd still has very strong numbers of nearly 350,000.  A recent
article published by CBC News says this is likely because the food sources are richer and there are less predators to contend with.

Trophy of the Month 

We see a lot of happy hunters go through our camps so we've decided
to establish a 'Trophy of the Month'
club to showcase their accomplishments.  Each month we will feature a past guest who's had a successful hunt with us.  

 

This month the award goes to Matt Vukelic, a regular guest of ours at North Knife Lake Lodge.

 

Matt's winning catch was a 40" Master Angler Lake Trout, pictured below.

Mike's Beer Batter Fish 

Since fishing season is now upon us, we thought it might be nice to share with you one of our favorite fish-fry recipes.  Enjoy!

 Mike's Beer Batter Fish

  • oil for deep-frying fishBeer batter fish
  • 2 lbs. fillets, any type of firm white-fleshed fish, pike and pickerel work well
  • 1 ½ cups flour 
  • 1 tbsp. Dymond Lake Seasoning  OR 1/2 tsp. salt and 1 tsp. pepper
  • 12 oz. can beer
  • 2 tsp. dill weed
  • ½ tsp salt
  • 1 egg
  1. Heat the vegetable oil in your deep-fryer or a large Dutch oven to 375 degrees F. You should have about 3 inches of oil. 
  2. Cut the fillets into serving pieces
  3. To make the batter, in a medium-sized bowl, whisk together the remaining ingredients with a wire whisk until smooth. 
  4. Drop fish pieces into the batter and then into the hot oil. Fry until deep golden brown, on both sides, turning once. Drain for just a minute on a wire rack placed over a cooking sheet.   

Serves 6 hungry men or their equivalent.
