A Grateful Heart....
I'm sure you've heard it before, but it bears repeating. Being grateful is the single most powerful thing you can do to create more to be grateful for. Gratitude creates happiness, contentment and some studies are showing that it can even create better health. Every day I try to write 5 things in my journal that I'm grateful for and, believe me, in the early days of doing this, I had days where I struggled to find 5 things to write about. That is, until I started looking at the world of micro-gratitude. In other words, I'm grateful that strawberries are red, that lemonade is sweet and tart on a hot summer day, that roses smell good. You'll never run out of things to be grateful for when you look at your life this way. It's essentially the same spot that meditation takes you - into the place where you are living in the sweetness of the moment.

A Fearless Heart....
I used to think that being fearless had something to do with not having any fear. Over the years of owning a business, I've met many people who have inspired me because they were afaid. Sound crazy? The thing is, now I know that being fearless doesn't mean being without fear. It means "feeling the fear and doing it anyway." I've seen people afraid about being sick and watched as they found ways to heal themselves. I've seen people afraid of being alone and watched as they created friendships and relationships they might not have thought of creating before they were alone. I've seen people afraid of not having a job and watched as they rediscovered what really makes them happy. "The fearless are merely fearless. People who act in spite of their fear are truly brave."

A Forgiving Heart....
Have you ever thought about giving your heart a gift for Valentine's Day? I'm not talking about chocolate or new shoes. I'm talking about forgiveness. Whether it's a friend who said something cruel or your sister who butted into your business when she shouldn't have, I've learned from eperience that holding anger and resentment only creates suffering for one person -- and it's not the person you're angry with. Releasing anger and resentment gives you an endorphin high that you won't get with 2 hours of spinning or a pound of chocolate. Need some help figuring out how to do it? Easy and Healthy Dark Chocolate Mousse
Since we're talking about hearts, I decided to include a heart healthy recipe for something decadent -- it IS Valentine's Day. Be forewarned, it has the "t" word as an ingredient and I haven't made it myself, but it got good reviews on food.com and it looks pretty darn good. So, you make it first and let me know how it turns out, okay?
Ingredients:
- 12 1/3 ounces silken tofu, drained
- 3 ounces dark chocolate, finely chopped (60 to 70 percent cocoa solids)
- 1/4 cup unsweetened cocoa powder
- 1/4 cup water
- 1 tablespoon kahlua
- 1/2 cup confectioner's sugar
- fat-free whipped topping (optional)
- chocolate shavings (optional)
Directions:
In a blender, process tofu until smooth.
Combine chocolate, cocoa, water and brandy in a small saucepan over medium heat; stir until melted
Remove from heat; mix in sugar, a little at a time, until smooth.
Add chocolate mixture to tofu; process until smooth.
Spoon mousse into champagne glasses; cover and refrigerate for at least one hour.
Top with whipped cream and shaved chocolate
