This week I decided to do a bit of straightening and cleaning (yikes!) and pulling beads to put on the sale table. I ended up with quite a pile - it overflows the sale table.

Pumpkin Crunch

3 eggs
1 cup sugar
1 can (13 oz) evaporated milk
1 can (29 oz) pumpkin (NOT spiced)
1 tsp cinnamon
� tsp ground cloves
� tsp ginger
� tsp nutmeg
1 box yellow cake mix
1 cup chopped pecans
2 sticks (1 cup) butter, melted
Grease a 9"X13" pan and line bottom with wax paper.  Beat eggs and sugar until fluffy.  Add evaporated milk and pumpkin, blend well.  Add spices and mix.  Pour into pan.  Sprinkle top with DRY cake mix.  Sprinkle with pecans, lightly press down.  Pour butter over top.
 
Bake 1 hour at 350 degrees or until set.  Cool and turn out on cake plate. (I use a cookie sheet.)  Serve with freshly whipped cream.
 
Forget the low fat stuff & the Cool Whip.  Go for it - just don't fix this more than once a year!  OK - twice.
