Food For Thought...
Susan, from Art & Soul Gallery, is sharing her favorite Geek dessert-Baklava; a rich, sweet pastry made of layers of phyllo dough filled with chopped nuts and sweetened with honey.
Baklava
16 ounce package of defrosted phyllo dough 1 pound fine chopped walnuts 1 cup melted butter 1tsp ground cinnamon 1 cup water 1 cup white sugar 1 tsp vanilla extract 1/2 cup honey
Preheat oven to 350 degrees, butter sides and bottom of 9x13 pan. This recipe will make about 3 dozen.
Mix nuts with cinnamon and set aside. Unroll phyllo dough and layer 2 sheets, spread with melted butter, layer two more sheets, spread with butter until the 8th sheet. Sprinkle with 2 or 3 tbs sugar mixture. Continue layering and sprinkling. Finish with 8 layers on top and no sprinkles on top. Using a sharp knife, cut into diamond shapes. Bake for 50 minutes or until brown and crispy. Make the sauce while baklava is baking. Boil sugar and water until sugar is melted. Add vanilla and honey and simmer for about 20 minutes. Remove baklava from the oven and immediately pour sauce over it. Let it cool and serve. Do not cover or it will become soggy.
The Art & Soul Gallery features 160 Northwest and regional artists in all mediums of fine arts and fine crafts. Fine art to live with at an affordable price.

Down and Dirty at Country Village Rebecca's Garden News
Hold on to your hats--spring is here! We had a fun day at the Northwest Flower and Garden Show in early February. We attended a couple of lectures and picked up a few new dahlias for the Bird Garden. It's always the first sign of spring and really gets our gardening juices flowing.
The end of February/early March is great for pruning roses back and getting sweet peas planted. Be sure to bait the sweet peas for slugs! I like to feed the roses with a little tea I make from soaking alfalfa pellets in water--one-third cup of pellets per gallon of water. Let it sit for a day or so and then pour it around the base of the roses. They love it!
Fruit trees need to be pruned this time of year too. One year we saved the clippings from the pear tree at the Village and used them to make the little fence that surrounds the Bird Garden. Yes, it was a bit time-consuming, but it gets lots of nice comments and has held up pretty well. We thought it might help keep the ducks and chickens out of the garden--dream on!
If you are adding to your garden this year, check out this website: www.greatplantpicks.org. This site lists plants that have been tested for our climate and provide seasonal interest in your garden. The list is quite extensive and is divided into categories--trees, vines, perennials, etc. I find it really helpful when I am designing gardens or making plant recommendations to friends.
So don those gloves and have a lovely March!

March's Featured Shop:
Dee's Music Room actually started in Little Rock, Arkansas, at Little Rock AFB with the birth of our daughter in 1978. Wanting to use her music degree from the University of North Texas, along with long years of piano and organ and vocal performance, Dee started teaching piano lessons, eventually expanding to preschool music when she moved her studio and family to Del Rio, Texas, then to Colorado Springs, CO, to Dallas, TX, to Monterrey, CA, to Los Angeles (taking time to have baby #3), to Joshua Tree, CA and, finally, to the Seattle area!
In 2001, our son started school at Whole Earth Montessori, just down 228th from Country Village, where Dee has taught preschool music since 2002, again developing a piano studio right there at the school, and when they outgrew their space (and built a new, "green" classroom building), Dee had to find her own space right here in Country Village.
Starting across from Papa's Place in the Clock Tower Building, the studio moved upstairs to its current location in the old "Heartland Interiors" annex in August of 2009. And, we are now in the process of creating a new music store, Country Village Instruments!
Dee's Music Room has grown to include not only piano, but guitar, voice, violin, drum set and percussion, woodwind, art, and drama teachers, as well as the Childbloom Guitar Program (5 and up) and the Musikgarten Program (ages 6 mo - 5 yrs.).
As you look for music instruction, entertainment, or any performing art, please give us a call! Winter classes are ongoing, and our summer program info will be released soon!
