RECIPE: POTATO LATKES WITH APPLESAUCE
| | Serves 6.
INGREDIENTS 8 apples ½ c apple cider ¼ tsp cinnamon 1 Tbsp honey (more or less, to taste) 3 large potatoes, washed and peeled 1 small onion, peeled 2 large eggs 1 tsp salt (or to taste) ¼ tsp black pepper (or to taste) Vegetable oil for frying
Prepare applesauce: Core and slice apples, put in sauce pan with apple cider and cinnamon, and cook covered until apples soften. Stir in honey. Cool and chill. (For a variation try substituting ½ pound cranberries for two of the apples.)
Prepare potatoes: In a food processor or by hand, coarsely grate potatoes and onion. Hand squeeze the entire potato-onion mixture to squeeze out as much water as you can. Discard extra water, and put mixture into a big bowl.
In another bowl beat eggs. Add salt and pepper. Add the egg mixture to the squeezed grated potatoes. Mix well. Preheat a large skillet and add vegetable oil. Place batter in skillet and pat down with fork to make round latkes about 4 inches in diameter. When browned, flip, gently flatten with spatula, and brown on other side. Add oil to the skillet as needed.
Serve immediately topped with sour cream and applesauce. |
