| NORTHAMPTON ARTS NIGHT OUT | The 2nd Friday of each month, come join us for an artist reception honoring the Quarry Cafe artist of the month.

HEMENWAY HILL FARM, WILLIAMSBURG

|
 Hemenway Hill Farm of Williamsburg is a proud member of Pioneer Valley Milk Marketing Cooperative, also known as Our Family Farms. Terry and Alan Everett graze their cows on land that has been in the Everett family since the 1800s. Terry says, "I'm a member-owner of River Valley Market. The co-op does a great job taking care of and presenting our milk. The employees really care about what they're doing and bend over backwards to help. When you walk into the co-op you get a totally different feeling. It's supportive and community-oriented, and it's a really important part of the success of Our Family Farms."

RECIPE: CHICKEN COUSCOUS SALAD
|
Serves 6 as a side dish
INGREDIENTS 1 ½ cups water 1 ½ tsp curry powder, divided 1 tsp fresh ginger root, grated 1 tsp olive oil 1 cup uncooked couscous 1/3 cup plain yogurt ¼ cup fresh cilantro, chopped 2 Tbsp mayonnaise 2 Tbsp mango chutney 2 Tbsp water 10 oz River Valley Market Lemon-Pepper House-Marinated Chicken Breast, cooked and cut into bite-size pieces 1 cup red grapes, halved 1 cup pineapple, fresh or canned in juice, diced ¾ cup fresh diced cantaloupe 12 pieces lettuce ¼ cup scallions, sliced 4 Tbsp raw cashew pieces, toasted in a fry pan until fragrant, and coarsely chopped
PREPARATION Bring 1 ½ cups of water, 1 t of curry powder, ginger and oil to a boil in a small saucepan. Add couscous; remove from heat and let stand, covered, until water is absorbed and couscous is tender, about 5 minutes. Transfer couscous to a large bowl and fluff with a fork to separate grains; place in refrigerator for a few minutes to chill slightly.
Meanwhile, in a small bowl, stir yogurt, cilantro, mayonnaise, chutney, remaining 1/2 teaspoon of curry powder and 2 tablespoons of water together until blended. Pour over couscous; toss to coat. Add chicken, grapes, pineapple and canteloupe to couscous mixture; toss to mix and coat.
To serve, line each of 6 bowls with 2 lettuce leaves and top each with about 1 ¼ cups of couscous mixture. Sprinkle each serving with 2 teaspoons each of scallions and cashews.
