Prudhomme's Lost Cajun Kitchen
"A little bit of CAJUN in Pennsylvania"
Lancaster County is full of surprises, and Prudhomme's is one of them. Who would expect Alligator, Crawfish, Frog legs and Jambalaya in an 1800's hotel in the historic river town of Columbia, PA? Sharon and David Prudhomme (he's the nephew of Chef Paul Prudhomme) opened the restaurant in 1990 and have been serving Cajun and All-American fare 7 days a week. If the history of the hotel, including bootleggers and gangsters, isn't interesting enough; the food, the entertainment and the New Orleans' family traditions will keep you coming back. There are always special events scheduled such as Ghostly Paranormal Dinner coming up on November 26th. In December you can enjoy the "Live Mo-Town Christmas Dance" and for New Year's Eve you can dance the night away with "James Young & Sinatra Lives". This unique dining experience is another example of how there is something for everyone in Lancaster County! And be sure to ask your Innkeeper for a coupon to buy one dinner and get one for half price!

Recipe Corner

As the colder months settle in, it is baking time! Here is a recipe that everyone is sure to love!
Bite-Size Cinnamon-Pecan Twirls
1/2 Cup chopped pecans 1 tsp. ground cinnamon,
1/4 Cup butter divided
1/4 Cup firmly packed light 1-8oz.can refrigerated
brown sugar crescent rolls
2 T. corn syrup 1 1/2 tsp. granulated sugar
Preheat oven to 375 degrees. Bake pecans and butter in a lightly greased 8" round cake pan 2 minutes. Swirl pan to combine and bake 2 more minutes. Remove from oven and stir in brown sugar, corn syrup and 1/2 teaspoon cinnamon; spread mixture over bottom of pan. Unroll crescent roll dough and separate into 4 rectangles, pressing perforations to seal. Stir together granulated sugar and remaining 1/2 teaspoon cinnamon; sprinkle over rectangles. Roll up each rectangle tightly, starting at one long side; press edges to seal. Cut each log into 5 slices; place slices, cut sides down, in prepared pan. (Space slices equally in pan; slices will not touch.) Bake at 375 degrees for 14 to 16 minutes or until center rolls are golden brown and done. Remove from oven and immediately invert pan onto a serving plate. Spoon any topping in pan over rolls. Makes 20 miniature rolls.
