Cestina di Pasqua

Although rabbits in Italy are found more often on your plate than hopping around at your local mall for an Easter photo op, Italians do celebrate Easter much like we do with food, family and

festa.  Celebrations often begin with religious processions and end with a party that centers around regional culinary traditions that symbolize rebirth and renewal. After Lenten fasting everyone is ready to enjoy their Easter Basket "Cestina di Pasqua" and any leftovers are perfect for Pasquetta (Little Easter) when Italians take off to the countryside on Easter Monday for picnics with family and friends and to enjoy an extra day off of work or school.
