A Cositutti Recipe Favorite :Butter and Sage Sauce
"Burro e Salvia"
Wash and thoroughly dry 6-8 fresh sage leaves. Melt 4T butter in pan. Add sage and saute for about 2 minutes. Do not let butter burn. You should just begin to smell the aroma of sage.
I like this super quick sauce with
La Piana Ravioli with Squash Filling or La Piana Potato Gnocchi. Cook pasta according to package directions. Drain pasta, reserving a small amount of the cooking water. Pour drained pasta into the saute pan and toss evenly to coat pasta. Add a small amount of cooking water to moisten sauce, if needed. Top with Parmigiano Reggiano and fresh ground black pepper if you like.
