If you want the best prosecco, look for the letters DOC on the label.  It means that you are guaranteed of the quality and heritage of prosecco made in the district of Valdobbiadene (Val-do-bi-ad-en-ay) near the town of Conegliano in the Veneto. Here is where the finest prosecco is made.
 
FYI - The traditional string used to tie down the cork with this wine is known as "spago".

Several of you have asked why I like Pecorino Toscano cheese so much. It all begins with la mia famiglia and my experiences eating and traveling in Italy with my Italian family and friends.
 
I was first served pecorino with pears and Italian Chestnut Honey (coming soon to www.cosituttimarketplace.com ) at the end of a memorable family meal in Milano. At first the idea of cheese served with honey seemed odd but after my first taste I knew that this was Italian sprezzatura (effortless mastery). The flavors complemented each other perfectly. It has been a favorite of mine ever since.
 
Pecorino Toscano is a sheeps milk cheese with a smooth texture and hints of wildflower and herbs of Tuscany.  It is shy in flavor, not strong, with a taste of the Tuscan countryside. It serves well as part of an antipasti with salume and sausages and is exceptional with Italian Truffle or Chestnut Honey.
