Seven Facts About Cheese & Your Health
Zen Cheese Plate This time of year brings about those familiar "New Year's Resolutions."  After the indulgence of the holiday season, many of us resolve to lose weight, get in shape or reduce our cholesterol.  But what about eating cheese?

We are happy to say that nutritionists agree - cheese is actually beneficial to your health!  Numerous studies show when integrated into your diet, cheese & other calcium-rich foods can help you shed those extra pounds. Because we knew you would be skeptical, we've compiled the top seven healthy facts about eating cheese:
  1. Dairy foods have a number of compounds that work with calcium to augment the process of fat-burning and slow down the process of making new fat.
  2. Cheese is rich in protein. Protein builds muscles and body tissues and helps you resist disease.
  3. Daily dairy consumption helps reduce belly fat.
  4. Lowfat dairy products, especially goat cheese, may help reduce the risk of colon cancer, the third leading cause of cancer deaths in the United States.
  5. Including three servings of dairy along with 8-10 servings of fruit are thought to help lower high blood pressure & reduce the risk of heart disease.
  6. Cheese is great source of Vitamin A. Vitamin A helps you grow, helps you fight infections, helps your eyes adjust to dark and light, and aids in the making of strong teeth.
  7. 3-A-Day is all it takes - three servings of dairy (think cheese) is all it takes to maintain a healthy & happy body!

The totes are handmade by Gina's mom Gert, a fireball Austrian who was trained as a seamstress.  These bags can be used for years to come.

Many farms are producing organic cheeses, such as Cowgirl Creamery in Northern California. Still others are using only natural methods to make the cheese, leveraging solar power and recycling precious resources in an effort to combat the effects of global warming. The veteran of the Venissimo team, Michelle has been cutting the cheese & sharing her humor for more than three years. When asked why she adores Manchego (pronounced mon-CHAY-go) here's what she had to say:

Cheese that people rename Man-cheN-go so viscioulsy!
You go well shaved thinly over tomato soup or on truffled pasta - your deliciousness knows no bounds. It must be because sheep"s milk is so fatty. But let us not focus on such things when there is such a marvelous cheese to be had!
 
As the manager of the Mission Hills shop, she keeps the cheese flowing and the party going. Be sure to say hi next time you're in!
