If you read Channel 3 weather forecast and believe it, you just might die if you come out before 7pm tonight. They think we have never seen any snow here in S.W. Michigan.
Come on out tonight for the best Italian cuisine served up in the Zoo.
Ossobuco in Gremolta alla Milanese One word, with two "s" and one "c." The word means hollow-bone and, in culinary terms, it refers to the Italian dish ossobuco with gremolata alla Milanese. It was originally a seasonal dish, to be cooked in winter time on charcoal or wood stoves and also had the function of warming the household. Slow braised veal shank topped with parsley, garlic and lemon zest finely chopped together on creamy risotto with broccoli rabe.

Pollo Saltimbocca
Breast of Chicken stuffed with prosciutto and sage then coated in flour and cracked pepper seared and oven roasted. Served with broccoli rabe mushroom accompaniment and risotto.
Bucatini all'Amatriciana
Originating from the town of Amatrice. The dish is simply fresh made pasta, tomatoes, cured pork and cheese. To be authentic it must contain guanciale, (gwan-cha-le). A bacon like cured pork that it is not smoked, made from pigs cheek. We have procured this hard to find item, raised organically, from the famous Niman Ranch and put it on made here angel hair pasta topped with parmesan.
Patata Gnocchi con il fungo Sugo A simple pasta dish from the Bologna region. Potato gnocchi or dumpling means little pillows and is made here. Lovingly placed on a tomato and mushroom sauce that has been simmered for five hours and dusted with grated pecorino and parmesan cheeses.
These dishes and a few other surprises after 5pm Tonight through next Saturday.
