Welcome to this issue of our newsletter.

The Green Teaist's "Updated" Website

Please view the updated website of The Green Teaist.  We have revised it considerably and fine-tuned many of the references and items offered on the website. Of particular interest, at this Holiday Season, we believe, will be the fine array of teas and gift sets, especially this year's new Teaista® Signature "Infuseur" Tea Set.

(Please visit thegreenteaist.com or telephone 847-234-2175 for full particulars and ordering this one-of-a-kind gift for the holidays.)

The Green Teaist is privileged to announce that it has been selected by the famed Toraya Confectionery Company of Japan to offer Toraya Yokan as part of the Salon Menu at The Green Teaist Salons in Lake Forest, Illinois and Beverly Hills, California.  The Green Teaist will also have available an assortment of Toraya Yokan for retail purchase in different sizes and flavors.

The Toraya Confectionery Company is the premier wagashi (traditional confections of Japan) producer, with a history going back almost 500 years and, to this day, a purveyor to the Imperial Household of Japan.  Yokan is the principal product of Toraya and is a sweet bean jelly utilizing azuki (red beans).  Two of the most famous and popular Toraya Yokans are Yoru-no-Ume (made from whole azuki and Omokage (made from azuki and a molasses-like, dark brown sugar). These are especially delectable with two of the most popular green teas of Japan served and sold by TGT, Sencha (Harayama) and TGT Blend (a proprietary blend of Sencha, Kukicha and Matcha).

The Green Teaist will introduce Toraya Yokan, beginning later this month, to the Midwest and  California.  What will be particularly appealing to some is that the product is naturally vegetarian and there are no dairy products, eggs or animal byproducts (unlike gelatin) used in Yokan as agar agar (natural seaweed) is used to create the jelled  aspect of the confection.  Those customers who are sensitive to gluten will be pleased to know that Yokan is 100% gluten-free as well.  It is a unique sweet which goes particularly well with green tea, a pairing which has continued for many centuries in Japan.
