Other ways to enjoy Fiona's European Muesli
~ Stir into yogurt.
~ Cover with cow's milk, almond milk, soy milk, oat milk, rice milk, hemp milk, or goat milk.
(For best results, let sit five minutes in milk or yogurt, then enjoy.)
~ As a hot cereal. Cover with hot water (or hot milk) and let sit three minutes. No cooking required!
~ Add to smoothies.
~ Add to cookie batter in place of regular rolled oats.
~ As a replacement for oatmeal.
When used in place of oats, you get the added health benefits of the fruits, nuts, and seeds.

Happy New Year!
New Year brings freshness, excitement, energy, and also expectations! We at Fiona's Natural Foods are constantly trying to exceed ours and your expectations. For the New Year, Fiona created her flavored, roasted nuts, in five varieties. She has also just created a second Trail Mix, sure to wow your socks off!
Because improved health is always on a New Year's Resolution list, this issue focuses on one avenue to improved health: eating raw food. Eating food in its raw state offers many health benefits, and people who follow a raw food diet report high energy, a heightened sense of well-being, and improved sleep patterns.
At Fiona's Natural Foods, we offer two lines of raw foods: authentic European Muesli, and Trail Mix. Read on to learn more about these wonderful products.

Benefits of Raw Food
Webster defines "raw food" as food that is in - or nearly in - its natural state, not processed, and not purified. Most raw foodists call food raw if it's never heated above 42 C/118 F degrees.
Why eat Raw?
- Cooking and heating kills the enzymes in food, thereby making food harder to digest. Our bodies have to work harder to create the enzymes to digest, and so we often feel heavy and tired after a cooked food meal. Raw food is much easier to digest, and we don't feel heavy afterwards.
- Cooking also changes the pH of food, making it more acidic. Raw food is more alkaline, which is what our bodies naturally prefer.
- Raw foods have a higher degree of easy-to-absorb minerals and vitamins, which are often rendered inorganic or are destroyed during cooking processes.
- Raw food has life force, meaning it gives energy.
- Raw food contains fewer saturated fats, and is low in sodium.
- Raw food is high in potassium, magnesium, folate, fiber, and health-promoting phytochemicals.

Muesli was created in the late 1800's by a Swiss health
practitioner who believed that raw, unprocessed foods offer countless health benefits. With this in mind, he developed a breakfast cereal for his patients.
Our European Muesli is a hearty, wholesome blend of organic oats, nuts, seeds, and fruit. With no added oil, this breakfast cereal is naturally low in fat and contains no cholesterol. A good source of protein and fiber, our muesli is a great way to start your day, offering heightened energy without added sweeteners. Simple and delicious, Fiona's European Muesli nourishes your body, mind, and spirit.
We offer three varieties of European Muesli - Cherry Pecan, Fruity Almond, and Pepita Papaya. Each variety is raw and contains ingredients that will get your New Year off to a healthy start!
- Organic rolled oats are the basis for all our mueslies. Known to reduce cholesterol and help fight heart disease, oats also have anti-inflammatory properties.
- Flax Seeds are the best plant source of Omega 3 essential fatty acids. They are rich in soluble fiber, protein, and important vitamins and minerals. They also contain a high concentration of lignin, a phytonutrient that has been shown to fight certain cancers by flushing excess estrogen out of the body.
- Tart Cherries contain more pain-relieving properties than almost any other food, partly due to their high levels of melatonin, which can help reduce inflammation.
- Pecans are a good source of fiber and are rich in Vitamin E, thiamin, magnesium, and copper.
- Raisins supply a healthy amount of fiber, iron, potassium, and B vitamins.
- Cranberries are powerful antioxidants, aid in calcium absorption, and help enhance the immune system.
- Almonds have been shown to lower LDL cholestrol levels while reducing the risk of heart disease.
- Pepitas (raw pumpkin seeds) are a good source of protein and fiber, and they also contain the important minerals zinc, magnesium, manganese, and phosphorus.
- Papaya, high in fiber and Vitamin C, also contains Vitamins A, E, and K, which are powerful antioxidants. The enzymes in papaya help in food digestion.

Mimi's Muesli Cake
This exceptionally moist cake is reminiscent of German Chocolate Cake - even without the chocolate! This version is wheat-free. If you use wheat flour instead of barley flour, omit the xanthan gum.
1 1/4 cups boiling water

1 cup Fiona's Muesli 1/2 cup butter 1 1/2 cups brown sugar, lightly-packed 2 eggs 1 tsp. vanilla 1 1/3 cups barley flour 1/4 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. xanthan gum*
Pour boiling water over oats. Set aside. In large bowl, cream butter and sugar, then add eggs and vanilla; mix well.
In medium bowl, stir together flour, salt, baking soda, cinnamon, and xanthan gum. Add to creamed mixture and incorporate. Add muesli and mix well. Pour into greased 9" x 13" pan, or into a bundt pan, and bake at 350° for 30 minutes. Spread on icing and enjoy! This cake may be served warm or cold.
Topping :
4 Tbls. butter 1/2 cup brown sugar, lightly-packed 1/2 tsp. vanilla 2 Tbls. milk 1/2 cup shredded coconut 1/2 cup chopped pecans
Place all ingredients in saucepan and stir together until butter melts. Immediately spread onto warm cake.
Fiona's favorite : Fruity Almond Muesli
* Xanthan gum helps hold together baked goods with little or no gluten. Since barley flour contains little gluten, the xanthan gum (a powder found in any health food store) will keep the cake from crumbling.
