Lettuce at Windcrest Farm
Welcome to the Windcrest Farm Newsletter for Spring 2007! I hope you enjoy our new format with photos - all of which were taken at Windcrest Farm. The Barcarole and Four Seasons lettuces pictured here were grown in the hoophouse this fall. We have started more of these and quite a few other lettuce varieties in the greenhouse this Spring and will have them available for sale at the Matthews Community Farmer's Market starting April 14th. The Purple Coneflower gives us one of the most common herbal extracts in use today. Its botanical name, Echinacea is derived from the Greek echinos meaning "hedgehog", which resembles the central cone of the Echinacea.
