This crisp rosé blends grapes from VT, NY and Quebec.  Lots of fruit and just a hint of sweetness make this the perfect fall wine for your picnic basket and all things BBQ.  Also pairs well with spicy Asian food.

Ingredients:
2 slabs baby back pork ribs
Spice rub (below)
1 cup good BBQ sauce

For spice rub, mix together:
2 chipotle chilies, in adobo sauce, chopped
2 cloves garlic, chopped
2 Tbsp. tomato paste
1 Tbsp. red wine vinegar
1 Tbsp. brown sugar
1 Tbsp. honey
1 Tbsp. chili powder
1 Tbsp. cumin
1 Tbsp. oregano
1 Tbsp. thyme
salt and pepper

Coat ribs with spice rub, cover and marinate, refrigerated 2 hours or overnight.

Roast (single layer) on baking sheet for 2 hours at 275 deg.  turning occasionally.

Brush ribs with BBQ sauce and grill 5 minutes on each side.

Serve with remaining BBQ sauce.

It's September in Vermont and the grapes are heavy on the vines.  The sun has finally come out in time for the all important ripening process which begins with "veraison".  Veraison is the point in the growing season when the berries begin to soften and change color, and it is well underway throughout our vineyards.  Slowly the grapes are developing the sugars, tannins and color that will all come together in the end to produce a wine that is a reflection of its terroir.

New Releases

2008 Gewürztraminer
"Gewürz" means spice.  This slightly sweet white has a soft and floral nose and fills your mouth with a burst of spice.  The perfect pairing with spicy Asian foods.

2008 Vermont Riesling
Our Meach Cove Riesling is floral on the nose with notes of violets and white flowers.  A hint of minerality balances a lush flavor of sweet pear.  This small bottling will sell out fast!

2008 New York Riesling
Made from grapes sourced in the beautiful Finger Lakes region of NY, this Riesling presents flavors of soft, ripe pear with hints of pineapple.

It's been a busy year and it's time now to wait for all our hard work to pay off.  We've had the wettest start to summer we've ever experienced in our 11 years of commercial growing, but thankfully the sun has come out just in time to move our grapes into the ripening stage.

winery graphicOur vineyard work has been focused on exposing grape clusters through combing (straightening out the shoots), trimming, and some leaf removal to allow for air flow and sun exposure.  Currently, we are busy repairing and retrofitting trellising and of course watching the progress or our maturing grapes.
