 Cajun Daughters

 

Thank you for your support of Cajun Daughters!  We enjoy bringing to you recipes on real Cajun cooking and what's happening on the Cajun Coast.  

 

We have been very busy lately with our work lives and so we have decided to go back to our original publishing schedule.  That is, we'll be sending out Cooking It Up on the Cajun Coast once a month and Laissez Les Bon Temps Rouler every week to keep you informed of what's happening every week on the Cajun Coast.

 

We'll still be posting recipes on the Cajun Daughters' website at www.CajunDaughters.com and posting on Facebook at WhatsCookingOnTheCajunCoast, so please check to see what's the latest dish cooking!

Shrimp Fettucini

 

Shrimp Fettucini

 

2 onions, chopped

1 bell pepper, chopped

2 stalks celery, chopped

1-1/2 sticks butter

2 lbs. shrimp or crawfish tails

1/2 pint (1 cup) half & half

3 cloves garlic

1 lb. Velveeta cheese

1 small can jalapeno relish

12 oz. fettucini or egg noodles, boiled

Parmesan cheese

Cajun seasoning

 

Saute onions, bell peppers, and celery in butter until soft.  

 

Season shrimp with Cajun seasoning, add to mixture and cook for 15 minutes.

 

Heat half & half in microwave for 1 minute.

 

Add garlic, cubed Velveeta, and jalapeno relish.  Then add half & half. 

 

NOTE:  Adding the cold Velveeta first and then the warmed half & half helps prevent the half & half from curdling.

 

Cook for 15 minutes.

 

Mix mixture with fettucini and put in baking dish.  Sprinkle with parmesan cheese.  

 

Bake at 350 degrees for 15 minutes.

 

NOTE:  Casserole can be made days ahead and baked before serving. Freezes well.

Boudreaux at the Theatre

 

Boudreaux was drunk and lay sprawled across three entire seats in the Saenger Theater. When the usher came by and noticed him, he whispered, "Sorry sir, but you're only allowed one seat."

 

Boudreaux groaned but didn't budge.

 

The usher became more impatient. "Sir, if you don't get up from there, I'm going to have to call the manager."

 

Once again, Boudreaux just groaned.

 

The usher marched briskly back up the aisle, and in a moment he returned with the manager. Together the two of them tried repeatedly to move Boudreaux, but with no success. Finally they summoned the police.

 

A cop surveyed the situation and asked, "All right, buddy, what's your name?"

 

"Boudreaux," he moaned.

 

"I'm Cajun too. Where ya come from, Boudreaux?" asked the cop.

 

With terrible pain in his voice, and without moving a muscle, Boudreaux replied, "Da balcony."
