We had a great time at Chicot State Park last week (Kaye had to work, unfortunately).  I was able to visit many towns in Acadiana and will be telling you all about my travels and wonderful restaurant finds in the upcoming weeks!  
 
While visiting the beautiful town of Crowley, my traveling companion of the day, Katelyn Perez, and I met the mayor and other super-friendly Crowley residents. That's us below on the left with Mayor Greg Jones and other visitors at the Crowley City Hall and Museums. This weekend is Crowley's 75th annual International Rice Festival.  You really should try to make it if you can. It looks like it'll be great fun!

cajun recipe stuffed bellpepper

 

Stuffed Bell Peppers

 

6-8 medium to large bell peppers, depending on size

2 lbs. lean ground beef

2 medium onions, chopped

2 ribs celery, chopped

1/3 cup chopped parsley

Salt and pepper to taste

Breadcrumbs

Pats of butter

 

Bring a large pot of salted water (about a teaspoon of salt) to boil. Meanwhile, cut off tops of bell peppers and remove seeds. Completely submerge bell peppers in boiling water and boil for 3 minutes.  Drain, and set aside to cool. Important:  Do not let bell peppers sit in water as they will become too limp.

 

In a large pot, cook down ground beef with onions, celery, parsley, chopped bell pepper tops, and salt and pepper to taste.

 

Fill bell peppers with mixture, top with breadcrumbs, and put a pat of butter on top of each.

 

Place in baking pan to which you've added enough water to just cover bottom of pan.  Bake stuffed bell peppers in 350 degree oven until breadcrumbs brown, about 15 minutes.

Reverend Boudreaux was the part-time pastor of the local Cajun Baptist Church, and Pastor Thibodeaux was the minister of the Covenant Church across the road.  They were both standing by the road, pounding a sign into the ground that read:

As a car sped past them, the driver leaned out his window and yelled, "You religious nuts!"

 

From the curve in the road they heard screeching tires, and a big splash . . .

 

The Reverend Boudreaux turns to Pastor Thibodeaux and asks, "Do ya tink maybe da sign should jus say 'Bridge Out'?"

International Rice Festival

Crowley, Louisiana

 

The 75th International Rice Festival kicks off tonight with live musical entertainment that goes through Sunday.  Popular local bands, Cajun Zydeco and country music star, Tracy Lawrence, will keep you on your feet dancing. The festival includes a carnival, arts and crafts booths, the Rice Poker Run, car show, Children's Day on Friday, and the Grandest of all parades on Sunday -- The Grand Parade.  There's plenty of contests -- the Acadian Accordion Contest, Fiddle Contest, Rice & Creole Cookery Contest, and a Rice Eating Contest.  Enjoy great Cajun food and great fun at the Rice Festival!
