Recipe of the Month

Pumpkin Chocolate Chip Muffins

Although this combination of pumpkin and chocolate might sound odd, give it a try--it's delicious!

3/4 cup sugar
1/4 cup vegetable oil
2 eggs
3/4 cup canned or fresh cooked pumpkin
1/4 cup water
1-1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon cloves
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 cup chocolate chunks or chips

Grease 8 large or 12 small muffin tins.  In a large bowl combine the sugar and oil.  Add the eggs and beat well.  Blend in the pumpkin and water.  Combine the dry ingredients and add to the creamed mixture.  Mix only until all ingredients are just moistened.  Add chocolate pieces.  Pour the batter into the prepared muffin tins.  Bake in a 400 degree oven for 20-25 minutes.
