Recipe of the Month

Blackberry Buckle

We always love when berries come into season, and this recipe with its hint of nutmeg makes the most of fresh blackberries.  Great with raspberries too!

Batter:
3 1/2 cups flour
2 teaspoons baking powder
1 teaspoon salt
1/2 cup butter
2 cups sugar
2 eggs
1/2 teaspoon vanilla
1 cup milk
4 cups fresh or unthawed frozen blackberries

Topping:
1 cup sugar
1 cup flour
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup butter

Preheat oven to 350 degrees F. Grease and flour a 9 x 13 inch pan. Sift together flour, baking powder, and salt, set aside. Cream butter on high until light and fluffy, gradually add sugar while beating. Beat in eggs and vanilla. Alternately add flour mixture and milk, mix gently. Fold in blackberries. For Topping: Mix together sugar, flour, nutmeg and salt. Cut in butter with pastry mixer until crumbly. Spread over batter. Bake at 350 for 50 minutes, or until a toothpick inserted in center comes out clean. If you are using frozen berries it might take longer to bake. Makes 24 squares.
