Fresh faces?

Yes! Our cooking classes are always attracting people who are new to discovering our love of food and our desire to share our knowledge.

This month, we take you on an ocean cruise with a class on fish, and a Caribbean adventure that features, among other things, Jamaican jerk chicken. Read on for more information.

One of the main reasons we opened Cuisine & Passion three years ago was to share our passion with our friends and neighbours. Having recently signed up for a Twitter account, we now have even greater access to those of you interested in food and the goings-on behind the scenes. Join Chef Marc on a Caribbean culinary adventure!

If you love fresh fish, you will love the classes we have lined up for February 15 and 22. Don your aprons as you prepare--and then eat!--black mussels, scallops and prosciutto, and baked salmon with fresh herbs during this hands-on class. The cost is just $90 per person.

Or, if you are looking for a winter getaway but don't have the time (or money!) to head south, why not join us for a Caribbean Adventure either February 17 or 24?

During this demonstration class, we will be cooking up fish fritters, Jamaican jerk chicken, rice pelau, banana beignet... oh, and lots of fun!

Tip of the month: Easy clean-up

Thinking ahead can save you time  
plastic wrapDoes your counter top look like a disaster zone when you're done prepping for dinner? Here's a great tip that can save you valuable clean-up time.

Line your counter with a couple of lengths of plastic wrap before you start. When you are done, simply gather up the wrap--and messy contents--and you are most of the way to a sparkling clean counter top!
Featured recipe: Zucchini and feta cheese cake

Feta cheese adds a slightly tangy flavour 
Zucchini and feta cakes
Easy to make with readily available ingredients, these delicious fried cakes can be a great addition to breakfast or dinner.



   

  

Ingredients

(serves 4)

6 cups zucchini, grated

2 tsp sea salt           

4 eggs, lightly beaten

1 cup flour           

3 tbsp dill, chopped

1 cup feta cheese, crumbled

4 green onions, chopped

black pepper           

canola oil

Method
  1. Preheat over to 375F.
  2. Mix zucchini and salt and let stand in a colander for 20 minutes. This will draw the water out. Drain well and transfer to a bowl.
  3. Stir in the flour and the eggs.

  4. Add the feta, dill and green onions and mix well.

  5. Heat canola oil in a sauté pan.

  6. Form patties to about 5 cm long by 9 cm wide and 1 cm thick.

  7. Sauté until golden brown on each side.

  8. Transfer to a cookie sheet and bake for 10 minutes.

  9. Enjoy!
