| January wine-pairing class filling up fast

Our cheesiest wine-pairing class ever!
 We are really excited about this month's upcoming wine-pairing class. In the past, we've paired wines with both beef and seafood. This month, we are featuring perhaps the most traditional pairing of all, wine and cheese.
Join Chef Marc on January 27 from 6:00-9:00 p.m. and learn the secrets behind great wine and cheese pairings. (How do you choose? What do you serve? How much should you serve?) And you'll get to treat your palate to a number of pairings!

Chef Marc scheduled to visit CTV Morning Live

Watch for Chef Marc to make an appearance on CTV Morning Live on January 12. He will be on at 8:10 and then again at 8:40 with two different recipes. He will also be talking about the upcoming cooking classes.
Brand new feature on TFO Last month, we told you that television producer Paul Mengoumou was developing a feature profile on Cuisine & Passion for the French-language TFO television network.
The final results are stunning (if we do say so ourselves)! You can view the feature here. (Note: this is a link to the entire program. The Cuisine & Passion piece starts at around the 16-minute mark and runs for about seven minutes.)

| Well, that kept us busy

It was just a little hectic over the holidays!
 What French Canadian family hasn't rolled out dough for traditional tourtières around Christmas time? How about rolling out dough for 189 of them?
All of our tourtière pasty shells (plus the shells for 42 quiches, as well) were, as always, made by hand and our pastry chef, Melanie, is probably nursing sore elbows right about now because of it.
Oh, and the filling?
Chef Marc cooked 75 pounds of beef, 75 pounds of pork, 75 pounds of veal and 60 pounds of mashed potatoes to fill those pies. (All of this plus the dozens of Tourtière du lac St-Jean we prepared, as well!)
Chef Chantal usually makes the pastry dough but with Melanie on board, Chantal switched to making sandwiches--644 of them!
And, on top of the regular offerings of salads, mains and vegetable dishes and the special Christmas and New Year's dinners, we also turned 100 litres of balsamic vinegar (and bottles and bottles of wine) into our signature Balsamic Glaze. And soup? Sixty-five litres of that, too.
All we have to say is... We do it all for you so thank you for keeping us busy!

| A little birdie told me so

We've been so wrapped up in creating and delivering great food--and great value--we hardly noticed the little birdie that had snuck into the kitchen this past week. He landed squarely in the middle of Chef Marc's cutting board. (Thankfully, he hadn't started chopping, yet!)

Just a short note to say thank for your interest in our special dinners served over Christmas and New Year's. Quite a good number of people liked the idea of having a traditional Christmas dinner with all the trimmings, for example, without the work. It left more time for family and friends.

| Holiday Magic: A passion for giving

Helping in the community
A great big hug to everyone who took part in Holiday Magic this year. With your donations, we were able to feed 20 families (80 people) who otherwise would not have been able to enjoy a traditional Christmas meal.
Just to remind you... Hundreds of families in Orléans--our friends and neighbours!--visit the food bank each month just so they have something to eat.
You gave a little. It helped a lot.

| Tip of the month: Re-visiting your Christmas turkey

Using leftover turkey
No need to panic with all the leftovers after the holidays. You do not have to eat turkey for weeks to come.
Here's an idea: Split the turkey into portion sizes and freeze. This way, when you need turkey for a pie or soup-or a hundred other reasons-it's there for the taking.
If you use a Cryovac (or similar) machine that removes air from the freezer bags, your leftover turkey will keep up to six months.

No rolling pastry for this pie!
 If you've put aside a little Christmas turkey in your freezer, here is a recipe you may want to keep handy. Simple to make and oh-so-delicious, you'll wish you had leftover turkey more often.
This can also be done using chicken.
500g cooked turkey, diced 500ml turkey stock (available at Cuisine & Passion) 1 medium carrot, diced 1 celery stalk, diced 1 medium Spanish onion, diced 1 leek, diced 1 tsp parsley, chopped 1 tsp chives, chopped 1 tsp basil, chopped 2 medium potatoes, precooked and shredded 2 tbsp canola oil or melted butter 2 tbsp corn starch 2 tbsp water Salt and pepper to taste
Method - Put the diced turkey in a bowl large enough to hold all your ingredients
- Place turkey stock, carrot and celery in a saucepan and bring to a boil. Once the vegetables are cooked, strain them from the stock (leaving the stock in the pan) and add them to the turkey in the bowl.
- Mix the cornstarch and water together and slowly add it to the turkey stock until you get the desired consistency. You may not need it all.
- Add the fresh herbs and thickened turkey stock to the bowl. Set aside.
- In a small frying pan, sauté the onion and leek until translucent--do not allow them to caramelize (turn brown). Add to the turkey and stock bowl.
- Adjust the seasoning and pour into an ovenproof container.
- Mix the shredded potato and butter and spread evenly across the top of the dish.

Bake in a hot oven at 350F for 15 to 20 minutes until the top is golden brown.
- Enjoy!
