Happy holidays, everyone!
We are celebrating on several fronts this month. Not only are we looking forward to the holidays, but we are also celebrating a special award we received this past week (more on that in a moment).
And, in honour of this, our 25th newsletter, along with a new recipe this month, we are offering a recipe for Marc's Fruit 'n Nut Stuffing that was published in our first newsletter back in December 2008.
This is, by far, our favourite time of the year--and we can hardly wait to share it with you!

"We are truly honoured to receive this award as it is chosen not by a panel of experts, but by the very people who frequent our store and support our efforts," said Chef Chantal as she stood at the podium in front of almost 200 people at the 2010 People's Choice Business Awards.
The trophy will take its rightful place alongside the earlier honour. In 2009, our first full year in business, we were fortunate to receive a People's Choice Business Award for Retail Business of the Year.
Thanks to all of you who voted, thanks to our wonderful staff including Anne and Matthieu, and a special thanks to our beautiful children, Julien and Maurissa, who not only allow us to work all these hours without complaint, but who also spend a lot of time at the store helping out. We are truly blessed.

While we sell a lot of our house-made frozen tourtières throughout the year, now is when they really start flying out the door. No wonder, as Chantal has become known for her hand-rolled pastry dough and the delicious filling of pork, veal and beef plus a hearty dose of herbs. And they are just $15.99 each!But don't miss out. Please reserve in advance as supply is limited and demand is high. And once again this year we will be making Tourtières du lac St-Jean. And again, because we are making only a limited number, we would advise ordering yours now. Tourtière du lac St-Jean is a deep-dish pie covered in flaky pastry dough and filled with venison, duck, chicken, pork and beef. Each pie feeds six to eight people and comes in its own 1.8-litre ceramic ramekin. They are priced at $60 each.

Once again this year, our customers came forward to help us help those in need. Hundreds of families in Orléans--our friends and neighbours--visit the food bank each month just so they have something to eat.Last month, we launched Holiday Magic, a chance for all of us to give back to those in need. We are pleased to say that we will be feeding 20 families (80 people) thanks to your support.Our friends at the Eastern Ottawa Resource Centre will distribute the food. Please visit our shop to see the names of those who donated. They are prominently displayed at the front of the store. |

As a customer, you already know that we make everything from scratch using only the finest and freshest ingredients we can find. And we get them locally, wherever possible. But did you know we also offer great value?

The first Holiday Hors d'oeuvres class this month was a sell-out and this one promises to be the same.
On December 1, join Chef Marc to learn how to prepare eight different hors d'oeuvres so you can impress your friends and family this holiday season.

The cost is just $45 per person. The demonstration class starts at 6:00 p.m., is approximately 90 minutes in length and you get to take the recipes home.

Tomato knife The very best kind of knife for slicing tomatoes has a serrated edge. But using those large bread knives can be cumbersome, even dangerous. | Chef Marc's Fruit 'n Nut Stuffing
[Editor's note: This was the very first recipe we published when we launched the newsletter in December 2008. A new recipe is also published below.]
A holiday favourite around the Gagné-Miron household, this stuffing has a sourdough base and features cranberries, orange pieces and the delicate, subtle flavour of chopped pistachio nuts.
While many people cook the stuffing inside the bird, we recommend a safer practice to ensure both the bird and the stuffing cook properly: cook the stuffing separately in a covered Pyrex-type dish or a cake tin covered with aluminum foil.
Ingredients (Makes five cups)
2 tbsp. butter 1 small onion, diced 2 sticks of celery, diced 10 slices of sourdough bread, chopped into 1/2-inch pieces 1 cup dried cranberries 1 orange, split into segments zest from one orange 1/2 cup pistachio nuts, chopped 2 cups chicken stock salt and pepper to taste
Method
1. Pre-heat oven to 400 degrees F.
2. In a frying pan on medium-high heat, sauté the onion and celery in the butter and set aside.
3. In a large bowl, mix the bread, cranberries, orange segments, orange zest and pistachio nuts.
4. Add the cooked onion and celery to the bread, fruit and nut mixture and season with salt and pepper.
5. Mix in chicken stock.
6. Pack stuffing tightly in an over-proof dish or a cake tin covered with aluminum foil. Bake for 30-45 minutes at 400F.
7. Enjoy!

| Featured recipe: A southern specialty

| Jambalaya
In Canada and most of the United States, "mire poix" is a trio of flavours produced by onions, carrots and celery. And it is the basis of just about every stock. In the southern US, particularly Louisiana, the carrots are replaced with bell peppers.
And it is this combination of flavours that is the beginning of what may well be the most famous of southern dishes: Jambalaya. Perfect on a cold winter's night. Bring on that southern comfort!
Ingredients (Makes five cups)
1/4 cup canola oil
1 cup red or yellow pepper, diced
1 cup celery, diced
1 cup onion, diced
2 cups Uncle Ben's rice
2 chicken breasts or thighs, diced in 1/2-inch cubes
1/2 chorizo sausage
25 shrimp, cleaned and cut in 1/2-inch cubes
3 tbsp Cuisine & Passion Creole Spice
4 cups chicken stock
Method
- In a large pot, sauté all vegetables in canola oil until they start to soften.
- Add rice and mix well to ensure rice is coated with the oil.
- Add chicken, chorizo, spices, shrimp and chicken stock. Cook on open flame to simmer for approximately 18 minutes.
- When rice is cooked, remove it from the heat and cover for 15 minutes to let the rice absorb the rest of the liquid and flavours.
- Enjoy!
