Asian noodles. Ramen soba, udon, hokkien, somen ... To the
novice, it can be overwhelming. The good news is that it doesn't have to be.
Essentially, you have wheat noodles, rice noodles and
gluten-free noodles (always check the label).
Noodles are quite inexpensive so why not experiment? Try
different flours, shapes and textures. You'll soon find several that will
becomes staples in your cupboard.

Here's a quick and easy way to try Asian egg noodles in
soup.
Start by preparing pre-cooked carrots (julienne-style),
sugar snaps peas, bok choy or spinach, and pre-cooked sliced salmon. Then
prepare your noodles (which should be done last because time will cause them to
tighten up). Boil them in plenty of water and, unlike pasta noodles, rinse and
drain them thoroughly.
Put a portion of noodles in each bowl topped with vegetables
and salmon. Then cover with a good home-made chicken stock. We have some in
stock-pun intended-if you need it. To add an element of fun and individuality,
you can put things such as soya sauce, hot sauce, fresh herbs and slices of
lime on the table so diners can season their own bowls.
