New York trip piques interest of major US publication
Wagyu beefIn July, Chef Marc traveled to New York to meet with a number of top NYC chefs to teach them new and innovative ways to use Australian beef. An American industry-leading magazine, Food Arts, not only covered the event, it added a 12-page insert that featured photos of all Chef Marc's dishes. It was mailed to 60,000 Food Arts subscribers.
 
The Wagyu Tataki with Daikon Salad and Japanese Seared Beef with Wasabi Mayonnaise, pictured above, is just one of the featured dishes.
 
Although the magazine is not widely available in Canada, there are copies in the store if you'd like to have a look.

A new twist on old favourites


Chef Chantal wows them at the You Deserve It! conference
ChantalMore than 300 women were in attendance at the You Deserve It! women's conference this past weekend and, as she has for the past two years, Chef Chantal was there to show off her culinary skills.

This year she gave four demonstrations of how to take 70s-style appetizers such as shrimp cocktails and Beef Wellington and give them a new-millennium twist. Oohs and ahhs were commonplace and the questions were plentiful--at least until the samples were handed out. Suddenly the room went quiet...
 
It was nice to see many of the women come by the store this week. If you weren't one of them, we sure hope to see you soon!
Technology issues put a small dent in our communications


Just when you think you have it all figured out...
Email iconWe've had some server issues--now resolved--that have resulted in intermittent email service over the past four days. If you've sent us an email with a question, to book a class or to place an order in the last few days, it may not have gotten through. (One tell-tale sign is that we haven't responded promptly.) We ask your indulgence and request that you resend it.

Cuisine & Passion in the running for six awards!


Awards gala set for November 18

Join us for wine and hors d'oeuvres


Helping children around the world
TrayJoin us at Cuisine & Passion on Saturday, December 5, for a fundraising event in support of La Fondation des Foyers, Angèle. This registered charitable organization helps children around the world and the orphanages and communities who welcome them.

Featured recipe: Roasted Butternut Squash with Balsamic Vinegar

A great fall dish for the whole family
Squash Other kinds of squash can be used in this recipe, but butternut, widely available locally at this time of year, is by far your best choice.

Hearty and flavourful, it's the perfect side dish to accompany most meats and just about any kind of starch (e.g., potato)  dish. It will feed six to eight people.
 
(serves 4)

1 butternut squash
1/2 large onion, sliced
2 tbsp. canola oil
2 tbsp. balsamic vinegar
  1. Chop off the two ends of the squash (as you would a cucumber). Then, cut off the ball end of the squash and clean it out. If the remaining piece is quite long, chop it into two pieces as well.

  2. Stand the pieces up on a cutting board and peel them using your knife to cut down the sides.

  3. Cut squash lengthwise into 1/2-inch strips and put them in a large bowl.

  4. Slice the onion into thin strips and add to bowl.

  5. Add the canola oil and balsamic vinegar to the bowl and toss everything together well. Season with salt and pepper.

  6. Transfer to a baking sheet and roast in a 350-degree oven for 30 minutes or until tender.

  7. Enjoy!
