village of Gonzales in the State of Tamaulipas, Mexico, which is just
south of the now growing and very modern metropolitan city of Tampico,
Mexico. Senior Federico Garcia and, his wife, Senora Raquel taught the
Garcia children very early about hard work on their family ranch.
Flowood Location
The Garcia Family migrated to the United States
in the late 1980's through Texas to Savannah, Georgia, where most of the
children finished their education in the United States while their
Mother and oldest brother worked two and three jobs to support their
family. While one younger sister married an army man and began the
traveling life of a military family, two brothers and three sisters and
their mother moved to Chattanooga Tennessee and began their journey
operating Mexican restaurants.

In 1995, the Garcia Family moved to Jackson,
Mississippi to open their very own restaurant, Margaritas Mexican Grill.
Through hard work, long hours, excellent food and fast service at very
reasonable prices, the original Margaritas Mexican Grill recently
celebrated its 10th anniversary in its original location.
In August 2001, the Garcia Family opened La
Cazuela Mexican Grill in Jackson Mississippi in the historic Belhaven
area, which services the neighborhood, nearby medical facilities and
hospitals and provides great fast lunches for the Downtown crowd as well
as a local gathering place for singles and families after work and
during recreational time.

In January 2004, the Garcia Family opened another
Margaritas Mexican Grill in Clinton, which has been well received by
the local Mississippi College students and faculty and families in
Clinton and Vicksburg.
Hot Fresh Tortillas Ready to Serve!
Finally in October 2005, the Garcia Family opened
Papitos Mexican Grill in Madison Mississippi in the Colony Crossing
Shopping Center in honor of and as a memorial to their husband and
father.
Imported traditional Mexican decorations, art and
furniture adorn each of the restaurants. For an hour or two while you
dine in a little casita booth inside a Garcia Family restaurant, you may
actually believe you are in a little village in Mexico Viejo (Old
Mexico).
The Garcia Family will continue growing its
traditional Mexican family restaurants in 2006 by adding a Papitos
Mexican Grill in Oxford, a Papitos Mexican Grill in Vicksburg and Los
Jarros Mexican Grill in Byram, Mississippi.

Black Bean Pork Burritos
3/4 cup thawed limeade concentrate 1 tbsp. olive oil 2 tsp. salt, divided 1 1/2 tsp. pepper, divided 1 lbs. boneless pork loin, strips 2 cups chopped/seeded tomatoes 1 sm. green pepper, chopped 1 sm. onion, chopped 1/4 cup minced fresh cilantro (1) 1/3 cup minced fresh cilantro (2) 1 jalapeno pepper, seeded/chopped 1 tbsp. lime juice 1/4 tsp. garlic powder 1 cup uncooked long grain rice 2 cups shredded Monterey Jack Cheese 6 flour tortillas (10 inches), warmed 1 can black beans, rinsed and drained1. In a large resealable plastic bag, combine the limeade concentrate, olive oil, 1 tsp. salt and 1/2 tsp. pepper; add pork. Seal bag and turn to coat; refrigerate for at least 20 minutes.2. For salsa, in a small bowl, combine the tomatoes, green pepper, onion, 1/4 cup cilantro, jalapeno, lime juice, garlic powder and remaining salt and pepper.3. Cook rice according to the package directions. Stir in the remaining cilantro; keep warm. Drain and discard marinade. In a large nonstick skillet, saute pork for 5-6 minutes or until no longer pink; drain.4. Sprinkle 1/3 cup cheese off-center on each tortilla. Layer each with about 1/2 cup pork and 1/4 cup salsa; top with 1/2 cup rice mixture and 1/4 cup black beans. Fold sides and ends over filling. Service with remaining salsa. Yields 6 servings.
