Greetings!
As we hopefully leave the cold behind and get into warmer weather and the Spring Season, , I reflect back on the past year and a half with great appreciation for all the friends I've made, the health and closeness of my family, and the fortune I have to be able to feature my ideas directly with our guests and staff.
Let me also take a moment to personally thank each and every one of my staff members for all the hard work they have put into making Visions such a great place. I've been doing this for over 23 years, and I never forget that you can never do it alone, and that along with my parents and future wife, my "restaurant family" always plays a big role in my life. Remembering so many PAST restaurant families, we gain a ton from each person, and hopefully lead them a bit to further their career in the industry. Q: What does "Dry Pack" or the term "Diver Scallops" refer to?
A: Can we just say...NATURAL?
Being a friend of seafood...I get a lot of questions through email asking about our big scallops...and how someone can cook them similarly at home..
Two factors..
1) Buy NATURAL, NON "PROCESSED" SCALLOPS. What this refers to is the typical habit of scallop producers to inject their scallops with ammonium triphosphate, which gives the scallop a more plump look and glistening appearance. Unfortunately, like a lemon on a used car lot..these scallops will not perform the same when cooked. The "water" that is injected into them will leak out in the cooking process, not only shrinking them, but making them boil in their juices, NOT sear...hence, point #2
2) Searing at a high heat in a little oil is what gives
them that great crispy texture outside and that perfectly cooked
inside. Top with a little fresh salsa or a simple sauce, and you're in
HEAVEN
