Well, it's that time of year again.  Happy Thanksgiving!  And, the holiday season is upon us.  We will be open regular hours (10am ~ 5:30 PM) on Wednesday, November 26th and Friday, November 28th.  Like you, we have reserved Thursday to eat too much.  'Tis the season for digestive enzymes.

Also, as cold & flu season is also here you may want to pick up some echinacea, vitamin C, Wellness Formula, or Kyolic Garlic just in case you feel a bug coming on.  Remember, natural remedies work best the sooner you start them.

Tea-licious!

It is said that Chinese Emperor Shen-Nung accidentally "discovered" tea in 2737 BC while he was enjoying a cup of water when a breeze blew some leaves into his glass.  When he drank the mixture, he declared that it gave him vigor of body, contentment of mind and determination of purpose.  Today, tea is the second-most-consumed beverage in the world after water.

With so many varieties and flavors of tea, it's interesting to note they all come from the same leaf.  The tea plant, Camellia sinensis is an Asian, warm-weather evergreen that is the source of all teas, white to black.  White tea comes from early-plucked young leaves and buds.  White teas, such as our Indian White Tea, has a light delicate flavor and is low in caffeine. 

Green tea, by contrast, comes from leaves that are steamed after picking and dried unfermented, resulting in a lower caffeine content but more leafy and astringent flavor, as found in the popular varieties gunpowder and dragonwell teas.

Black teas are the same leaves fully fermented and oxidized, bringing a bitter rich flavor and a stronger caffeine content commonly found in breakfast teas. 

The individual blacks and greens can be blended into well-known varieties such as English breakfast, a combination of Assam and Ceylon teas.  Teas can also be flavored with other ingredients to become delicacy teas including Earl Grey, with its flowery bergamot essence, and jasmine green tea.

We have eight varieties of tea:

We mentioned the Gunpowder Green Tea.  The Chinese call the tightly rolled gray-green leaves of Gunpowder tea "pearl tea".  The tiny balls unfold like a flower during the infusion process to release a flavor that is sweet and penetrating.

Darjeeling Tea is arguably one of India's finest exported teas.  Darjeeling means "Land of the Thunderbolt".  This high grown teas is plucked in the shadows of the Himilayan mountains.  Darjeeling is often described as being evocative of currants or fine wine grapes.

Young Hyson tea is a large-leafed, pan-fired Chinese green tea.  Young Hyson is one of the finest grades made from tender young leaves.  This tea yields a golden brew with an earthy-green flavor.

Dragonwell or Long Jing is the most famous of Chinese green teas with a history of twelve hundred years. According to local lore, this tea was grown near a legendary well inhabited by dragons. The jade colored green leaves are flattened by hand in a heated wok to create its characteristic shape. The leaves open releasing a mellow chestnut flavor and slightly sweet aftertaste.

Bancha, the "vin de table" of Japanese green tea, is essentially a lower grade Sencha consisting of coarser leaves that make a somewhat brisker tea. This fine-grade, surprisingly aromatic Bancha has a light-golden cup color and a slight, sweet aroma.

Our much sought-after Indian White tea is produced in very limited production making it one of the rarest white teas available. It's long, spear like ivory-green tips with russet hue brews a complex cup offering fresh grassy notes with an undertow of malty spice

Five-To-Life
Looking more closely at links between nutrition and behavior, a new study in the United Kingdom will track more than 1,000 prisoners.  The study aims to find if the significant reduction in antisocial behavior seen in similar studies resulted from dietary adequacy and optimum nutrient dosages.  Experts say the results could lead to nutrition guidelines for mental health, not just physical.

Fish Oil Supplements Test Clean
A positive report on the quality of fish oil supplements by ConsumerLab.com in July validates the success in producing safe, uncontaminated omega-3 supplements.  ConsumerLab.com tested 50 omega-3 supplements and found that all had safe levels of mercury, lead, and polychlorinated biphenyls(PCBs).  In addition all of the supplements contained their labeled amounts of EPA and DHA (the two essential fatty acids found in fish oil).

According to Tod Cooperman, MD, "You can easily get a month's supply of a good supplement for less than a pound of fish and without the contaminants."
