o for men only............feb 29-march 3 - we're not teaching survival skills - these men will learn to seduce through serious food - without exhausting themselves too much!
o new to cooking........april 4-7th - achievable dishes for the beginner does not equal dull food!
o fabulous vegetarian...may 9-12th - great vegetarian food that would win over any meat-eater's heart!

Remember that during the courses we will be serendipitous of mind - as the French have been for centuries. We will forage the markets (and countryside) for the best produce of the season and turn it into fabulous, modern food that is good to eat and pretty to look at.
You will return home armed with all the information you need, and a few full-proof ideas for dishes that can be re-invented and adapted according to the changing ingredients of every season.
