Can you believe that Superbowl XLV is right around the corner? Have you made your dining plans?? If you are planning to entertain that weekend or go out to dinner, you need to start planning now. The metroplex is gearing up for an influx of people and so are local restaurants.

 

 

 

Abacus will be closed Thursday, Friday and Saturday for large groups that started calling over 6 months ago. Other fine dining establishments, sports bars and casual eateries are also experiencing the same phenomenon. Many restaurants did not even open their reservation books until this week. Our suggestion is to plan ahead, know the closings or bookings at your favorite location.

 

You can join us at all Jasper's, Rathbun's Blue Plate Kitchen and Zea WoodFire Grill on Friday and Saturday. All Jasper's will close at 3 pm on Sunday. Zea will be closed all day Sunday.

 

And ALWAYS remember, Kent Rathbun Catering would love to come to you that weekend. We can do anything from a tailgate party or dynamite buffet to a 5-course seated dinner. If you are interested, you can contact Terry Kranz.

20th Annual Taste of the NFLtaste

Come join Chef Kent in his 10th year, 11 local celebrity chefs, nationally known chefs and top football stars on February 5th at the Ft. Worth Convention Center for food, libations and a great time. The entertainment this year is country recording artist Martina McBride.  Miss America 2011, Teresa Scanlan  will also be  in attendance.

Since 1992, the Taste of the NFL has rallied the country's top chefs and the NFL's greatest to raise money in support of food banks throughout the United States. The efforts culminate at the Super Bowl with The Party with a PurposeŽ. Held on the eve of Super Bowl, this event is a unique way to experience exceptional cuisine, meet NFL players and coaches, and support our fight against hunger. Through the efforts of hundreds of volunteers who help make Taste of the NFL the single most successful charitable event at the Super Bowl, Taste of the NFL continues to help feed the 37 million Americans who have turned to their local food banks for assistance. Millions of needs, thousands of families and dozens of new hunger projects have been affected by this major volunteer effort.

For this event,  in honor of the 20th year, they are trying to raise $1,000,000 to support the nation's food banks. This special celebration will feature chefs who were at the first inaugural Taste, including Celebrity Chefs Tom Colicchio, Susan Goss, Robert Del Grande, Susan Spicer, Todd English, Stephan Pyles and Nancy Silverton along with NFL greats Jan Stenerud, Bobby Mitchell, Floyd Little, Tommy Nobis and Bob Lurtsema. Also attending will be over a dozen Pro Football Hall of Famers. Kent has invited his chef friends to participate, which include Dean Fearing, Tim Love, Sharon Hage, David Holben, Grady Spears, Brian Olenjack, Michael Thomson, Jon Bonnell and Blaine Staniford.

 Hunger and Thirst Calendar Recipe

Each month in 2011, we will be featuring one of Chef Kent's original recipes which can be found in the 2011 Hunger and Thirst Calendar. Chef Kent, photographer Pat Haverfield and The North Texas Food Bank worked together to bring you this calender which proceeds helps feed the hungry. January: Crispy Mushroom Roast

4 ounces whole butter
2 tablespoons garlic cloves, cleaned and minced
2 tablespoons shallot's, cleaned and minced
1 pound chanterelle mushrooms, cleaned and cut in pieces
1 pound trumpet royal mushrooms, cleaned and cut in pieces
1 pound baby portabellas, cleaned and cut in half
1 pound cinnamon caps, cut in small clusters
1 pound hon-shimegi mushrooms (white and brown), cut in small clusters
1 tablespoon Kent Rathbun Elements Steak & Chop Garlic Salt
1 tablespoon Falksalt , mushroom crystal flakes
2 tablespoons parsley leaves, chopped fine

1. Melt butter in a large cast iron skillet.  
 
2. Add garlic and shallots on medium heat and sweet until translucent.

3. Add cut mushrooms and start to saute until mushrooms start to brown on the edges.

4. When mushrooms start to brown on edges and soften, season with Kent Rathbun Elements Steak & Chop Garlic Salt.

5. Serve mushrooms in the skillet and garnish with Falksalt and chopped parsley.
