We're in full swing with the 2005 Harvest, our 26th. You'll hear most local winemakers complaining about how hard they're working but they don't know the half of it. There's nothing really hard about winemaking; yet, there's nothing easy about it either. At harvest time it's the culmulative effects of working long endless days and sometimes nights. It starts for me at dawn with the picking of the grapes ( but most winemakers have little or nothing to do with the farming). I juggle keeping the picking crew in bins and water with the daily winemaking chores like punching caps and lab work. Then when the days picking is over, the bins laden with grapes have all been tractored from field to crush pad and the crew is done for the day, the winemaker's (that's me) day begins.

Here, thank god, I have my brother-in-law Dennis getting all the equipment clean and set up and ready to crush the day's grapes. Then one bin at a time the grapes are coaxed into the de-stemmer crusher which miraculously picks the grapes off the stems. The must (grapes, skins, seeds, juice but no stems) then is gently crushed through rubber rollers and is amazingly (and sometimes less than amazingly) pumped with our high-tech peristaltic Italian pump into an awaiting fermenter tank. Bin after bin is processed until all the day's grapes are cozily squished into a collective mass ready to begin the transition from grapes into wine. A sample is drawn and sugar, pH and total acidity is tested. That tank's chiller valve is opened and the cozy warm mass of must chills out overnight.

Pre-fermantation chilling is a hallmark of winemaking here for decades. Giving a headstart to the extraction of color, flavors, aromas and all that's water soluble before fermentation begins, means the must won't sit in an ever-increasing alcohol bath as long. This reduces the extraction of the harser components (albeit necessary in the right amounts) like tannins and phenolics (bitter), etc. Pressing the juice away from the skins a little earlier results in robust fruit-powered wines with smooth but rich background.

From the press the new wine is pumped into a tank to settle the gross lees simply utilizing gravity. Then the clear wine is racked off the lees into oak barrels where it will age for more than a year. The rest is a story for a later date. So how do I find time to do all this, make pizzas Friday nights, cater an occasional wedding, etc? The fact of the matter is I don't find time to do everything and emails go unanswered, marketing efforts get delayed but this is life and the living is good.

Then at 4:45pm you will return to dining area in the cave behind Winery by the Creek (downtown Fair Play). There you'll check in, open your cards, and post your best hand on the board. A buffet dinner presented by the Fair Play Bistro will begin shortly thereafter. As you're enjoying dinner, our staff will be positioning the card hands according to world poker rules in anticipation of handing out the prizes. A table full of prizes donated by the 5 wineries will be awarded the winners for the best hand, worst hand and everything in between.

Big Brother's bureaucratic boilermaker has finally approved our new labels so printing can begin. That means our long awaited new releases will begin to be rolled out. Our estate red wines of 2002 like Merlot, Syrah, Grenache, Cab/Shiraz as well as a few of our 2003 estate reds like Cabrnet Franc, Pinot Noir, Cabernet Sauvignon and the fabled Tir na nOg will be available soon. Our Wine Fellowship members will be notified with an updated schedule of release dates and pick-up parties shortly.
