Food For Thought

Survey Alert for food storage: Processed American cheese stored in the refrigerator is good for 3-4 weeks after opening, or if stored in the freezer, good for 6-8 months. Be sure to look at the manufacturer's expiration date or "best if used by" date and write this on the opened refrigerated containers of American cheese to know when to discard.

Greetings!      

     

Food-grade trash can liners for food bins and drinking water-grade hoses for emergency water access from hot water tanks are rising to the top of the unusual state survey issues. We bring you some solutions to these issues you can implement in your facilities and avoid these deficiencies. In this issue, you will also find some great free CE programs available online!

Sanitation Survey Alerts

Food-grade trash can liners: Jim Thiel, the Sysco sales rep for Spokane, WA confirmed that any CLEAR trash liner made by Heritage is considered to be food grade, and 99% of bags with the Sysco label are made by Heritage. The following items may be used for food storage or covering equipment (Do not use black or white bags for this purpose):

 

5765904 - all except Las Vegas and MT Sysco houses

5786843 - available at Montana

57857844 - available in Las Vegas

 

If you have any questions about a particular product - ask your Sysco sales representative and s/he can confirm for you. Read the FDA letter here for confirmation from Heritage.

 

Drinking-grade water hoses: Facilities that count on using the water stored in their hot water tanks for consumption during emergencies need to be using a "drinking-grade" water hose for draining these tanks according to state RD surveyors. These are available at hardware stores and RV supply stores, usually about 15 feet long, white, and indicate they are "for drinking water", but look like garden hoses. Facilities need to have policies and procedures for how to drain the water from the tank and for making sure the water is safe and suitable for drinking. Facility staff need to be trained on where to find the hose, water containers, water sterilizing chemicals, and how to sterilize the water. HMC policy and procedure manual suggests this water is best not to be used for drinking, but rather to help meet the water needs of the facility such as for hygiene and cleaning. Refer to Policy & Procedure manual policy number 840 on pages 488-491 for emergency water treatment methods. Food-grade containers such as two liter soda bottles with tight fitting lids may be used for water storage containers as long as they have been washed and sanitized first.
