April Newsletter

Hi Friends,

The arrival of fiddleheads always puts a smile on the faces of my staff. Finally--Spring's here! It's time to get outside (preferably on a bike), forage for local wild foods and add some welcome green to your plate. Spring is busting out all over on the menu--asparagus, pea shoots, artichokes, watercress, cardoons and ramps. Oh My!

Rialto's menu focus has turned to Umbria, the green heart of Italy, home to Italian black truffles and Orvieto wine. Our Regional menu offerings include a Salumi Antipasti with fava mustard, house-made ricotta and walnut cheese bread; Umbrian Tagliatelle with cardoons, spring peas and Parmigiano Reggiano; and your choice of Whole Roasted Trout with crayfish, lentils, favas and brown butter or Grilled Braised Porchetta with roasted spring onions, ramps, potato panzerotti and, for dessert, Rhubarb Walnut Tart with ginger cream, raspberry caramel, blood orange sherbet.

We were thrilled to have an early slice of terrace life this past March. Looking for after-work sanctuary for cocktails and bites?  Our signature Italian Teardrop Martini pairs well with just about anything on the terrace!

Team Rialto-Trade is excited to release the dates for our upcoming Pan-Mass Challenge fundraising events. Join us at Rialto on May 31 for our Spring Fling Cocktail Party. Enjoy live food stations and lots of wine and entertainment. On June 17, join us at Trade for a ride and reception. More details to come.

PANTRY

One reason Rialto cooking classes are so delicious is because we begin with our Pastry Chef, Susan Abbott's amazing scones!

As a special treat for our readers we begged her to share a recipe with us.

So for Mother's Day we recommend you make these Currant, Orange Anise Scones  as a surprise for mom to start the day. She'll love them!
