There is a lot to share this May!

 

First, I want to wish all Moms a Happy Mother's Day this weekend.  Being a mom of three kids, I look forward to the hand made crafts they bring home from school and give me every year...like the "All About My Mom" laminated placemat.  It amazes me how creative teachers are with helping children make the neatest things!

 

Next, I wish everyone a Happy Memorial Day weekend. For our family, this is the start of summer with school officially out so we usually gather with family or friends to enjoy this extended weekend.  As you load up on groceries, be sure to check the coupons in the Sunday paper and online as well for extra savings!  In the weeks leading up to a holiday weekend, the coupon offers are usually for items you would be buying anyway!

Kids and Coupons are a dynamic combination!

 

Train up a child in the way he should go, even when he is old he will not depart from it. Proverbs 22:6

 

Teaching kids about coupons is really about introducing spending habits and routines that will set them up for success as adults.  So, being the inventor of The Couponizer®, and dedicated to teaching others about spending money wisely, I decided it might be time to introduce kids to grocery shopping and saving money in a fun, interactive way.

My inspiration comes from my girls; they love to help me with my coupons.  When they were preschool age, they were still learning fine motor skills and would cut off the bar code (and their hair, this really happened!) if I did not supervise them.  However, now that they are school age, things are different.  I notice they really can help and enjoy selecting, clipping, sorting and shopping with coupons.  Quickly I noticed how this was reinforcing skills such as sorting, organizing, being responsible, making smart choices, as well as math and teaching them about the value of money.  So, I created a learning module and set out to test it at my girl's elementary school.  To make it fun, I came up with the character Snipper and made him into a stick puppet and HE taught the kids!

 

After I visited one class, each child wrote me a letter.  Below is just one of these precious expressions of thanks.  It was so gratifying to see how the children had embraced the lesson and SNIPPER too!  My hope is to find a way to make this available to more children.

I think you did a fabulous job!  You had all the areas to a great lesson covered!  I liked how you helped the kids with the first and last letters of the writing exercise when you noticed they were having trouble.  Maybe you should think about being a teacher.  Your lesson fit right into our math lessons about money.  I loved it!  Thank you.

A sweet and savory fresh-tasting summer salad!
 
Corn and Avocado Salad
adapted from allrecipes.com
 

Salad Ingredients:

8 slices bacon

2 head butterhead lettuce

1 red bell pepper, chopped

1 bunch green onions, chopped

3/4 cup sweet corn, cooked and chilled

2 avocados, peeled seeded, cubed

 

Dressing Ingredients:

1/3 cup olive oil

3-4 TB red wine vinegar

3 TB blue cheese crumbles

2 TB honey

salt & pepper to taste

 

Directions:

Sauté bacon until evenly brown, drain, crumble, set aside.  Combine lettuce, red bell pepper, green onions and corn and mix together.  Carefully stir in cubed avocado.

 

In separate bowl whisk together salad ingredients, then pour desired amount of dressing mixture over salad, toss, then add bacon on top of each serving for extra crunch!

 

COUPONS to look for: bacon, frozen corn, red wine vinegar, olive oil, blue cheese crumbles, honey.
