Spring Equinox
Spring is almost officially here! This year the Spring Equinox occurs on March 20th at 12:14am. This is when day and night are equal and balanced, but about to tip over to the side of light. Our days will start to get longer and warmer. The Spring Equinox is a time for celebration of the return of life, growth, and fertility in the world. It's a dynamic and energetic time - sprouts are busting out of their hard seed casings and working their way through the rich soil towards the sun, chicks courageously break out of the safety of their shells into an unfamiliar world. It's a time of transition, change, and forward movement. Embrace the energy of the season! It's a time to finally break through old, stuck patterns and see what's on the other side; to risk taking the steps to see ideas and plans that you've been contemplating into fruition; to put energy and importance on the things you wish to grow and nurture this year. This is a time for action! Happy Spring!

Herbal Consults Now Available!
We are excited to announce the addition of an herbalist to our practice! Kathryn Nemirovsky, M.S.O.M, L.Ac., will be available for herbal consults at NPCA outside of clinic hours. Kathryn is trained in Traditional Chinese Medicine and Five Element Theory. She will use the wisdom of these traditions to choose formulas to best suit your needs. The first session with her is an in-depth hour-long visit and it costs $75. Follow-up visits are either 2 weeks or a month later and cost $40. If you would like to add herbal medicine to your wellness plan, let us know and we will schedule you a session with Kathryn!

Breast Cancer Options in Kingston provides funding for 5 free acupuncture sessions for people going through breast cancer treatments or experiencing treatment side effects. Empire Passport Now Available!

The Empire Passport for this year is available! This is an annual pass providing unlimited day use vehicle entry to most of New York's State Parks and recreational facilities for just $65. It can be used locally for our beloved Minnewaska State Park. So, if you spend a lot of time up there hiking, biking, or swimming, this is a great way to cut down on entry costs for the year. Recipe of the Month

Spinach, Asparagus, and Leek Frittata
Eggs are a central symbol of Spring - they represent new life and potential. This is a delicious and easy seasonal dish. Feel free to use other veggies and herbs that sound good to you. You can also roast up some new potatoes with olive oil, salt, and fresh dill for a perfect side dish. As always, please use organic ingredients. Serves 4 1 box of baby spinach 1 lb of asparagus, cut into 1 inch pieces 1 leek, sliced thin and washed 1 T olive oil 2 cloves of garlic, minced 8 eggs 2 T milk ½ cup of freshly grated Parmesan cheese (or feta cheese if you prefer) Salt and fresh ground pepper Preheat oven to 400 degrees. In a mixing bowl, whisk together eggs, milk, and Parmesan cheese. Sprinkle with salt and pepper. Set aside. In a saucepan bring salted water to a boil. Blanch asparagus and refresh in ice water. Drain and pat dry. In a large, oven-proof saute pan (like a cast-iron skillet), heat 1 tablespoon of oil. Add leeks and saute until soft, then add garlic and a little salt and pepper. Sautee for another minute until garlic becomes fragrant. Add spinach (and more olive oil if needed) and saute until spinach is wilted and much of its liquid has evaporated. Spread out spinach mixture evenly in the skillet. Spread asparagus over it. Pour egg mixture over spinach mixture and asparagus. Use a spatula to lift up the spinach mixture along the sides of the pan to let egg mixture flow underneath. When the mixture is about half set, put the whole pan in the oven. Bake for about 15 minutes, until frittata is puffy and golden. Remove from oven and let cool for several minutes. Cut into quarters to serve. Enjoy! |
