heartinhands

Just a reminder that NPCA is operating as a drop-off site for Family of New Paltz's gift drive for the local Domestic Violence Women's Shelter. There's still time to contribute. The box will be picked up on Tuesday, December 15th. Accepted items include toys, scarves/mittens/hats, diapers (especially pull-ups), sippy cups, underwear and socks for women and children, baby food, towels and linens, laundry detergent, gift cards (Target, Sears, JC Penny, Payless Shoes), pajamas.   You can stop by the clinic for a complete list of suggested donation items.  Please make sure that items are sized for women or children, and are NEW. In the spirit of the holiday season, please consider donating to this essential organization; giving one small gift can make a huge difference to women and children in need.

Baked Apples

Mmmmmm....baked apples.....warm, cinnamony, delish....a great holiday food. Most of the time, they're made with brown sugar. This recipe just uses honey. As always, please use organic ingredients - especially the apples and butter. And if you can use local honey, your immune system will love you.

8 Fuji apples, remove cores and seeds leaving about ½ inch on the bottom (Fuji apples are best because they won't explode or become too mushy)

1 cup walnuts or a combo of walnuts and pecans, crushed

1 tsp cinnamon

1 tsp ginger

½ tsp nutmeg

2 T honey (more or less, depending on desired sweetness)

2 T butter

Preheat oven to 350 degrees.

Melt butter. Mix with crushed walnuts, honey and cinnamon.

Put this mixture inside each apple.

Put apples in a deep baking dish and add a little water to the dish.

Bake for 25-30 minutes.

Serve warm in a bowl on their own or with vanilla ice cream. Yum-o!
