The response to having massage at NPCA has been so great that we're now offering it on both Tuesday and Thursday evenings.  Here's how it works: after your acupuncture treatment, Kristen DeMatte, L.Ac. will do a 10 minute focused massage for $10.  How great is that?  Schedule your appointment for a Tuesday or Thursday evening if you want to take advantage of this great complement to your acupuncture session!  With this much relaxation, you just might want to bring a designated driver with you to bring you home afterwards. Just kidding!   (Sort of...)

RECIPES OF THE MONTH 

 

SALSA VERDE 

 

       SALSAS!      

   

 

Salsa Verde

This is a delicious, refreshing green salsa that's made with tomatillos. Tomatillos look like small green tomatoes, but they're actually related to the gooseberry. They have an inedible paper-like husk around them that they grew inside of and busted open when ripe. The flavor of the tomatillo is light, citrusy, and tart. You can usually find them at the New Paltz Farmers' Market at the stall of Three Sister's Farm, and most health-food stores carry them this time of year.

 

In many recipes, the tomatillos are cooked first, but I use them raw - easier and super fresh.  Remove the husks and rinse them in warm water - they have a sticky coating which can be a little bitter - and then cut them in half, for easier processing. 

 

This makes about a pint of salsa.

 

8 tomatillos
½ cup of onion, chopped

1 clove of garlic, chopped

Handful of fresh cilantro

Juice of 1 lime

Salt to taste

Fresh hot pepper, such as habanero, to taste (optional)  


Place all ingredients in a food processor and puree until smooth/slightly chunky. Serve and enjoy!

Fresh Apricot Salsa

Fresh apricots are delish - sweet and slightly tart. This colorful salsa adds great flavor to whatever you throw on the grill. You can also substitute peaches for apricots, or use a combination of both.

 

6 fresh apricots, chopped

1 clove garlic, minced

¼ cup chopped onions, shallots, or scallions

¼ cup green or red sweet pepper, chopped

A small handful of cilantro, finely chopped

Juice from 1 lime

Your favorite hot pepper, chopped

1 tsp honey

 

Mix it all up in a bowl, cover and refrigerate for at least an hour before serving.


 

  ONE MORE RECIPE....

We couldn't let summer go by without giving you our favorite recipe for that quintessential summer food, pesto.

 

Pesto

 

2 cups fresh basil leaves

1/3 cup nuts - either walnuts or pinenuts

1/3 cup extra virgin olive oil

2 cloves garlic, halved

salt and pepper to taste

½ cup freshly grated Parmesan-Reggiano (optional)

little piece of fresh habanero pepper (optional)  

 

Put all ingredients in a food processor and puree. You may need to stop a few times, scrape the sides of the food processor down, and blend again. You can heat it up, or serve it as is. Pesto also freezes really well, so you can pick up lots of fresh basil at the farmers' markets, whip up a bunch of containers of pesto, freeze it and have it all year round. Yay!
