TOKA EBISU FESTIVAL

In Japan this festival is held to pray for prosperity in business.
About a million people attend every year.

  • Always warm your brewing vessel and cups before brewing your tea.
  • The smaller the tea the faster it will infuse
  • Japanese Teas should infuse at between160 to 190 degrees.
  • You can "cold" infuse Japanese teas by using room temperature water for longer periods of time. Start with 2-3 minutes and adjust to your palate.
  • ALWAYS pour all of the tea liquor OFF the leaf. NEVER let the leaf continue to brew in the water. A BITTER cup will be the result. Use smaller teapots or serve pots

Obukucha...a New Years Ritual for Good Health 
dating back to the Heian period (794-1196)
In Kyoto people enjoy a special tea in January often at Rokuharamitsu-ji Temple to ensure good health for the year ahead.

In November the Tea Docents visited the Temple trying acquire some of this the tea to share with our readers.  It was not possible as they blend it ONLY in January. However we were able to receive the recipe and ingredients to blend this time honored treasure!
