Quick TIPS

Using GOOD water is as important as good tea. If you don't like the taste of your water you will NOT like the taste of your tea.

Japan studied water all over the world and concludes that for
North America the bottled water that most closely matches Japanese Spring water is Crystal Geyser.

Always warm your brewing vessel and cups before brewing your tea.

The smaller the tea the faster it will infuse.

Japanese Teas should brew at between
160 to 190 degrees.

The larger the leaves the warmer the brewing  temperature.

The longer you brew Japanese tea the more astringent they will become. Shorter your brew time to enjoy a sweeter less astringent cup.

ALWAYS pour all of the tea liquor OFF the leaf. NEVER let the leaf continue to brew in the water. A BITTER cup will be the result. Use smaller teapots or serve pots.

Re-infuse Premium Teas SEVERAL TIMES
let your palate be your guide.

Your second and subsequent brews will be almost caffeine free.
