Q: I am determined to lose weight this year by eating more healthy foods and limiting my calorie intake. I also workout for at least 30 minutes every day. I'm discouraged that I'm only losing about one pound a week. Is that normal? I see people on television losing huge amounts every week. Am I doing something wrong?  

A: Congratulations on your determination to pursue a healthier lifestyle! It sounds like you have a sensible approach to weight loss -- eat more healthfully, cut back on calories, and make time for exercise! With the success of shows such as "The Biggest Loser," it is understandable that people trying to lose weight are discouraged when they see contestants losing those big numbers every week. This is the exception, not the rule! People on television are usually put in artificial environments specifically designed to maximize weight loss. Their calories are severely restricted - often below 1,000 calories - and their exercise routine is extremely rigorous. Oftentimes, they are under the supervision of a physician due to the high-risk nature of such a situation. In addition, several hours a day are devoted to proper eating and exercise, which ordinary people like you and I cannot do. The value of shows such as "The Biggest Loser" is that it shows people that they are not destined to a life of being overweight. Your body can change, if you do the right things! But if you are not a weight loss television show, keep in mind that 3,500 calories equals one pound of fat. To lose one pound per week, you would need to cut 500 calories per day through diet and exercise. This is challenging enough under the circumstances of everyday life. So if you are losing a pound per week that is certainly something of which you can be proud. And remember ... slow and steady wins the race! -- Karen Bryla McNees, Ed.D., R.D.

UK Health & Wellness and UK HealthCare are proud to bring you the American Heart Association's Start! Campaign, a physical activity initiative to fight heart disease and stroke by getting people moving through workplace walking programs. UK's Spring Challenge runs from Feb. 3 to April 16. You must register for the challenge by Feb. 26. Please join us for the Start Kickoff Walk Feb. 3, at noon, Seaton Center, Room 132 (North Gymnasium). There will be prize drawings. Heart Sole & Glove 5K Run/Walk  
The annual Heart Sole & Glove 5K Run/Walk is Saturday, Feb. 13, at 10:00 a.m., at Coldstream Park (Newtown Pike and Aristides Blvd.). The Kids Fun Run (ages 6 and under) begins at 9:30 a.m. Parking and Registration at Embassy Suites. The first 100 registrants will receive a free pair of winter running gloves the day of the race. Weight Loss Matters: Reality-Based Weight Loss
Weight Loss Matters is a 10-week weight-loss program that teaches you how to eat, rather than how to diet. You'll work toward your goals with the help of our registered dietitians. Classes meet once a week either in-person or online. The initial fee is $50, and participants can re-join subsequent sessions for free as long as they make progress. New classes begin Feb. 16, 17, and 18. The registration deadline is Feb. 12. Register online today

HG's Very Vanilla Fluffcakes

Frosting
1 1/4 cups Cool Whip Free, thawed
1 1/2 tbsp. Jell-O Sugar Free Fat Free Vanilla Instant Pudding Mix

Cupcakes
Half of an 18.25-oz. box (about 1 1/2 cups) moist-style yellow cake mix
3/4 tsp. baking powder
1 cup Sprite Zero (or another diet lemon-lime soda), room temperature
1/2 tsp. vanilla extract
1/2 cup liquid egg whites or (about 4) raw egg whites

Topping
3 tbsp. rainbow sprinkles

Directions:
Preheat oven to 350 degrees.

To make the frosting, combine Cool Whip with pudding mix in a bowl, and mix until smooth. Cover and refrigerate until cupcakes are ready to be frosted.

In a large bowl, combine cake mix with baking powder and stir until free of lumps. Add soda and vanilla extract, and stir or whisk until batter is smooth. Set aside.

In a separate bowl, whip egg whites with a handheld electric mixer set to medium speed until fluffy, about 1 - 2 minutes. Gently mix egg whites into the cake batter until thoroughly combined.

Line 9 cups of a 12-cup muffin pan with baking cups and/or spray with nonstick spray. Evenly distribute batter among the 9 cups. Cups will be VERY full -- this is okay!

Bake for 15 - 17 minutes, until a toothpick inserted into the center of a cupcake comes out fairly clean. Set aside and allow to cool completely.

Once cupcakes have cooled, top each evenly with the frosting and 1 tsp. sprinkles.

MAKES 9 SERVINGS

Serving Size: 1 frosted cupcake with sprinkles
Calories: 164; Fat: 3g; Sodium: 293mg; Carbs: 30g; Fiber: 0g; Sugars: 16g; Protein: 2.5g
