Don't Let Stress Steal Your Holiday Joy!

The holiday season may be the most joyous time of year for some. Yet for others it brings stress and tension instead of tidings of good cheer. There can be so much to do -- working, shopping, cooking, gift giving, crowds, traffic, family stress, and too much food. You may even feel overwhelmed. So, what can you do to eliminate or reduce the stress?
Find your focus. The first thing you can do is to focus on what is important to you! Take some time to reflect on your focus for this holiday season. Is it your sanity, your family, your diet, your finances? This focus can even be a goal. Maybe it's to make it through the season tobacco-free, or to give more of your time rather than money. Write down your focus and keep it with you at all times. Set a realistic budget. Is your focus on not racking up credit card debt? Then make a budget for holiday gifts and food. This can help reduce any last minute spending sprees. Plan your meals. If this is the only time of year you plan out what you are going to eat, then do it now! The last thing you might want to think about after a long day at work or a long shopping trip is "what's for dinner." So have a plan for simple, healthy meals. Reduce trips. Save your sanity by reducing trips to the store or avoiding as many shopping trips as possible. Try doing most of your shopping online. You can find lots of great deals online that may not be offered in the stores. And many sites offer free shipping during the holiday season. Find what works for you. Taking time for yourself. A warm bath. A good book. A long walk. Find whatever works for you and start doing it NOW! That way, when the New Year begins, you'll feel refreshed. Happy Holidays!

VERMONT CHEDDAR MASHED YUKON GOLDS 8 servings, about 1 cup each Active Time: 20 minutes Total Time: 45 minutes
Ingredients: 3 pounds Yukon Gold potatoes, cut into 1 ½ -inch pieces 1 ½ cups shredded extra-sharp Cheddar cheese, divided 3/4 cup nonfat buttermilk, (see Tip) 1 teaspoon salt 1/2 teaspoon freshly ground pepper 1/4 cup sliced fresh chives, divided
Instructions: Place potatoes in a large Dutch oven and add enough water to cover. Bring to a boil over high heat. Boil until very tender when pierced with a fork, 20 to 25 minutes. Remove from the heat. Drain and return the potatoes to the pot. Mash with a potato masher. Stir in 1 ¼ cups cheese until melted. Add buttermilk, salt and pepper and stir to combine. Gently fold in 3 tablespoons chives. Transfer to a serving dish and garnish with the remaining 1/4 cup cheese and 1 tablespoon chives.
Tips & Notes: Make Ahead Tip - Cover and refrigerate for up to 2 days. To serve, reheat in a double boiler and garnish with cheese and chives. Tip - no buttermilk? You can use buttermilk powder prepared according to package directions. Or make "sour milk" - mix 1 tablespoon lemon juice or vinegar to 1 cup milk.
