Thinking about food this holiday season? If so, you’re not alone - food, family and holiday festivities go hand-in-hand. It will take superhuman effort to say “no” to everything you’ll be offered during the holidays so instead, try for moderation. Abstaining from problem foods most of the time is a lot better than none of the time. Here are three tips that will help you:

  1. Eat reasonably small portions of everything, and limit the foods you know you should limit. Stop eating when you’re feeling moderately full - don’t stuff yourself.


  2. Don’t arrive to holiday parties hungry. Tempting foods are much harder to resist when you’re hungry and your blood sugar is low. Have a nutritious snack an hour before a big holiday party like, light string cheese and some whole grain crackers or, an apple with some peanut butter, and watch your willpower soar.


  3. Don’t skip meals. Eating consistently throughout the day will keep your blood sugar constant and your moods even. This way, you’re not feeling vulnerable to eating significantly more than you intended. Having a plan will help you focus on what’s most important at the holidays - enjoying your friends and family.

Sweet Potato Souffle
INGREDIENTS:
� CUP BROWN SUGAR, PACKED
2 TBSP. TRANS-FAT FREE MARGARINE
� CUP GRAPE NUTS CEREAL
� CUP PECANS, CHOPPED
� CUP SUGAR
4 CUPS SWEET POTATO, COOKED AND CUBED
2 TBSP. UNBLEACHED ALL PURPOSE FLOUR
1 TSP. VANILLA EXTRACT
� CUP FAT FREE EGG SUBSTITUTE

DIRECTIONS:
1. PREHEAT THE OVEN 350� F. SPRAY A 1 1/4-QUART CASSEROLE AND SET THE CASSEROLE ASIDE.

2. TOAST THE PECANS BY PLACING THEM ON A BAKING SHEET AND TOASTING THEM IN THE OVEN UNTIL THEY ARE FRAGRANT AND A GOLDEN BROWN COLOR. 3. USING A FOOD PROCESSOR, PROCESS THE SWEET POTATOES, EGG SUBSTITUTE, SUGAR, VANILLA, AND 2 TBSP. OF THE FLOUR UNTIL THE MIXTURE IS MOSTLY SMOOTH, LEAVING SOME SMALL CHUNKS OF SWEET POTATO FOR TEXTURE. TRANSFER THE MIXTURE TO THE PREPARED CASSEROLE. 4. IN A SMALL BOWL, USE YOUR FINGERS TO RUB TOGETHER THE BROWN SUGAR, THE REMAINING 3 TBSP. FLOUR, AND THE MARGARINE UNTIL CRUMBLY. STIR IN THE PECANS AND THE CEREAL. SPRINKLE THE MIXTURE ON TOP OF THE CASSEROLE. 5. BAKE THE SOUFFLE FOR 25 TO 30 MINUTES, OR UNTIL GOLDEN BROWN. SERVE IMMEDIATELY.
