Hi Again! For those celebrating Valentines Day, here is a great recipe for a simply delicious salmon. Enjoy!

Salmon with Pesto Yogurt Sauce
Light and Lovely!

Salmon with Pesto 4 servings 1 1/4 pounds fresh salmon (1/2 cup pesto sauce) or home made sauce, see below 4 tbsp sliced almonds Sauce 3 onzas basil leaves blanched” 1 cup plain yogurt 1 tsp cornstarch 1 very small garlic clove

1. Spread pesto over the salmon and sprinkle with sliced almonds. Set aside for 10 minutes. 2. Prepare the sauce. Process basil and garlic, add yogurt and cornstarch and transfer to a pot. Cook over medium heat and bring to a boil. Mix and set aside until salmon is ready. 3. Bake the salmon in a preheated 220°F oven for 20 to 25 minutes. Remove the salmon from the pan (this will leave the skin on the pan) and place in a serving platter. 4. Pour the warm sauce around it and serve.

Home made pesto
Quick and simple, can be used as seasoning for other foods.

Home made pesto ...

3 oz basil leaves, blanched” 2 whole garlic cloves 1 oz parmessan cheese 1/2 tsp honey 1/2 tsp salt 1/4 tsp pepper 3 tbsp olive oil Process basil, garlic, parmessan, honey, salt and pepper to a ground mixture. Add olive oil and mix to a paste.

blanched” basil Drop basil leaves in a pot of boiling water for 15 seconds. Remove with a colander and place into a bowl of ice water. Strain and press to remove excess water.
