Chontaduro o Pixbae
La fruta del Palmito, un Afrodis�aco!
Para cocinar el pixbae (Pib�), pejibaye, o chontaduro:
1 rama de fruta (aprox. 40 frutas)
agua
2 cucharadas sal
1. Separe la fruta de la rama, podr� tener unas 40.
Coloque en
una olla a presi�n con agua que las cubra, sal y
cocine una
hora. (En una olla sin presi�n cocine unas 2 � horas)
2. Retire la presi�n, abra la olla y bote el agua.
Para servir pele la fruta, corte en cuartos y bote la
pepa o
semilla del centro. Sirva.
Barcas de Pixbae, Chontaduro o Pejibaye
20 porciones
5 frutas cocidas, peladas, cortadas en 4 y sin semilla
1 taza yogur colado o crema cultivada
1-onza caviar
cascos de lim�n
1. Coloque medias cucharaditas de yogur colado o
crema agria
y sobre �sta un poco de caviar. Sirva con casquitos
de lim�n.

De la maravilla de �sta fruta...
El Pixbae (Pib�), Pejibaye (pihb�) o Chontaduro
es la fruta de
una palma nativa del Pacifico de Centro y Sur
America al igual
que de la region Amazonica. Crece desde Nicaragua
hasta
Bolivia esta bella fruta de color rojo cuando madura y
que pasa
desde el verde a el amarillo y luego naranja para
llegar al rojo
en su madurez. De esta misma palma se saca el
reconocido
palmito, y que poco se consigue en su forma fresca.
Es una
delicia tanto enlatada como fresca, muy f�cil de
preparar y de
un sabor insuperable.
El , pixbae (pib�), pejibaye (pihb�) o chontaduro es
riqu�simo
en sabor y valores nutritivos. Lo puede servir cocido
con sal o
miel de abejas y tambi�n con las recetas innovadoras
que les
doy aqu�. El pixbae, pejibaye o chontaduro es casi
tan nutritivo
como el huevo, por su alto contenido de prote�na;
tambi�n
contiene beta-caroteno, f�sforo, Vitamina A, y algo
de B y C,
calcio y hierro. Adem�s dicen tener poderes
afrodis�acos. Es en
todo caso una fruta maravillosa!
Mermelada de Pixbae, Chontaduro o Pejibaye
10 chontaduros cocidos (2 tazas de fruta pelada y
cortada en
octavos)
1 taza az�car
� taza agua
1 cucharada jugo de lim�n
1. Vierta el az�car y el agua en una olla a fuego
medio. Lleve
al hervor, agregue la fruta y baje el calor a hervor
lento.
Cocine 10 a 15 minutos o hasta que el liquido se vea
espeso.
Agregue el jugo de lim�n, mezcle y deje a un lado
para enfriar.
2. Vierta en un envase limpio y refrigere.

10 chontaduros cocidos (2 tazas de fruta pelada y
cortada en
octavos)
� taza az�car
� taza agua
2 cucharadas cilantro
1 cucharada jugo de lim�n
� cucharadita jengibre rallado
� cucharadita aj� (Delida’s o Amazon)
1. Vierta el az�car y el agua en una olla a fuego
medio. Lleve
al hervor y cocine 5 minutos. Agregue la fruta,
cilantro, lim�n,
jengibre y aj� y baje el calor a hervor lento. Cocine 2
a 3
minutos y deje a un lado para enfriar.
2. Vierta en un envase limpio y refrigere.
Sirva con patacones o yuquitas.

Chontaduro or Pixbae
Fruit to the Heart of Palm, Palm Tree!
The Pixbae (Pib�), Pejibaye (pihb�) or
Chontaduro is the fruit of
a palm tree that is native to the Pacific areas of
Central and
South America as well as the Amazonian region.
Growing from
Nicaragua to Bolivia it is a beautiful red fruit when
fully ripe,
and yellowish to green when unripe. From the same
palm tree
they cut the tops and sell hearts of palm. They are
something
out of this world and super easy to prepare, a bit
expensive
and totally different from the canned ones, both
delicious.
The pejibaye (pihb�) or chontaduro is delicious when
cooked,
but it might be an acquired taste. So start with
these delicious
ways of serving it and then go to the pure fruit with
a bit of
salt or homey, delicious. The pejibaye (pihb�) or
chontaduro is
also a very nutritious fruit; almost as high in protein
as an egg
it also contains beta-carotene, phosphorus, Vitamin
A, some B
and C, calcium and iron. It is also an aphrodisiac, so
what else
can there be to this wonderful fruit. Just to enjoy it.
To cook the pixbae (Pib�), pejibaye, or
chontaduro:
1 bunch of fruit (about 40 fruit)
Water
2 tablespoons de salt
1. Separate the fruit from the palm roots, you will
have some
40. Place in a pressure cooker with water to cover
and salt,
cover and cook for one hour. (In a regular pot cover
and
simmer for 2 � hours)
2. Release the pressure and uncover. Drain and
serve.
To serve peel the fruit and then cut in 4, just be
careful there is
a tough seed n the middle. Serve with salt or
limejuice.

Chontaduro o Pixbae
Pixbae, Chontaduro or Pejibaye Jam
10 cooked fruit (2 cups peeled and minced fruit)
1-cup sugar
� cup water
1 tbsp limejuice
1. Place sugar and water in a pot over medium heat
bring to a
boil and add fruit. Cook for 10 to 15 minutes or until
slightly
thickened. Add limejuice, mix and set aside.
2. Place into a clean jar and refrigerate.
Pixbae, Chontaduro or Pejibaye Chutney
10 cooked fruit (2 cups peeled and minced fruit)
� cup sugar
� cup water
2 tbsp. minced cilantro
1 tbsp limejuice
� tsp. Grated ginger
� tsp. Hot sauce (Delida’s or Amazon)
1. Place sugar and water in a pot over medium heat
bring to a
boil and simmer 5 minutes. Add fruit, cilantro, lime
juice,
ginger and hot sauce, reduce the heat and cook in
low for 2 a 3
minutes and set aside to cool.
2. Transfer to a bowl and refrigerate or serve.
Serve with fried plantains or fried yucca.

Caviar and Sour Cream Palm Fruit Boats
Pixbae, Chontaduro or Pejibaye boats
20 servings
5 cooked fruit (peeled, quartered, seed removed)
1 cup strained yogurt or sour cream
1-ounce caviar
lime pieces
1. Arrange fruit pieces in a serving platter. Add some
sour
cream and top with caviar. Serve along lime pieces.
