The markets are loaded with CHILE, corn, cucumbers of all shapes and sizes, tomatoes, melons, summer squash, eggplants, garlic, onions, early apples, cantaloupe, okra, leeks, jalapenos, fresh herbs; basil, mint, lemon grass, tulsi and lemon verbena.

Roxanne's Green Enchilada Recipe

  Sauce:  

3 cups diced green chiles, roasted, peeled. 

1/2 cup finely chopped green onion

1/2 cup sour cream 

1/2 diced tomatoes or salsa

2 cans of cream of chicken soup or cream of celery soup

1 cup of cooked shredded chicken (optional)

2 Tblsp. oil 

salt and pepper to taste

 

2 doz. Corn Tortillas

Chedder Jack Cheese 

 

Preparation:

Heat oil, saute onion, tomatoes and chiles. Add soup and sour cream. Blend together add milk if too thick.  Add Chicken cook 10-15 min.

Fry Tortillas~drain on paper towels 

Dip tortillas into sauce and layer on plates or in a casserole dish alternating with cheese.

Place in oven at 350 degrees for 10-15 min.

 September 16, 17, and 18! 

 

The Tucson Farmers' Markets are bringing in LOADS of green and red chiles. The chile harvest has begun, heralded by the pungent aroma of roasted chiles. To celebrate, we will have roasted mild, medium and hot chiles by the bag, by the pound, and ready to eat. Fresh green chile roasting will be available on site by Bob's Roasters!  Tempt your taste buds with some of the finest rubs, seasonings, and sauces. Witness local Tucson chefs concoct original gourmet chili entrees!

 Let me introduce you to a beloved friend of mine; the delicious green chile of the late summer. Late summer is chile roasting time with the air filled with that delicious scent of roasted green chiles.  But what do you do with these lovely gems?  Whether it's Hatch green chiles or Anaheim peppers found around these parts the basic principle is the same. You can roast the chiles yourself over a grill or under the broiler.  If you choose to purchase them roasted for you, take them home and either store them in the freezer or take them out and peel off the roasted skin, leaving you with a lovely green chile ready to eat.  Green chile enchiladas or fresh salsa, anyone?

The rich red chile of autumn is available at summers end when the green chiles are ripening and changing to a bright red color. That's right, red chiles are the same peppers as the green, changing color at the end of their ripening season.  All over the southwest you see the beautiful  hanging "ristras", or red chile strings, decorating our homes and for sale on our roadways. These chile strings are not only lovely to look at- they are a great way to dry the bright red fresh-from-the-vine chiles.  After the chiles are dried, they can be used to make a red chile sauce (the basis for red enchilada sauce)or a multitude of other red chile dishes.  A note on the chile ristras: you may ask if the chile strings have been sprayed with a preservative, as some decorative ristras are to be used solely for decoration purposes.
Keep in mind, you don't need to purchase a chile ristra to get dried red chiles.

On September 14,15 & 16 the Tucson Farmers' Markets will be celebrating our annual Chile Festival with lots of fresh, roasted and decorative chiles.  Come to the markets and let us set your world on fire with a variety of some great tasting chiles.
