Bourbon Peach Cobbler
|
Ingredients8 peaches, peeled and sliced 1/4 cup bourbon (optional!) 3/4 cup sugar 2 Tablespoons cornstarch 1 teaspoon ground cinnamon 1 1/2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoons kosher salt 2 sticks cold unsalted butter 3/4 cup heavy cream 1 quart vanilla-bean ice cream ( Butter pecan would be great too!)
DirectionsPreheat oven to 375 degrees. Combine peaches, bourbon, 1/4 cup sugar, the cornstarch and cinnamon in a large bowl and toss to coat. Sift flour, the remaining 1/ cup sugar, the baking powder, and salt into a bowl. Cut 1 1/2 sticks of the butter into small pieces;add to the flour mixture and cut it in with your hands until mixture resembles coarse crumbs. Pour in cream and mix just until the dough comes together. Dough should be slightly stick but manageable. Melt the remaining 1/2 stick of butter in a 10-inch skillet over medium-low heat. Add the peach mixture and cook gently until heated through, about 5 minutes. Transfer the mixture to a 2-quart baking dish. Drop the dough by tablespoonfuls over the warm peaches. (There can be gaps because the dough will puff up and spread as it bakes.) Brush the top with some heavy cream and sprinkle with sugar and a little extra cinnamon. Bake in the oven on a baking sheet (To catch any drips!) until cobbler is browned and the fruit is bubbling, 40 to 45 minutes. Serve warm with the ice cream. YUM! $5. a Week By Roxanne Garcia Did you realize tha t you can make the change that you want to see in the world by spending as little as $5.00 a week? If I told you that we could create a common goal between all of us--to increase food sustainability and change existing food policy by spending as little as $5.00 a week at your local farmers' market, would you believe it? Well here some facts that may prove to be of interest.
Most of us are aware that we are losing our farms to growth, housing developments, and urban infrastructure, but the extent to which this is happening is astounding. Our region alone is losing farms at a rapid rate--since 1960 we have lost over 65% of our local food shed to urban growth. With a smaller local supply, our produce needs have been outsourced. Currently $3.3 billion dollars a year is spent on food that is trucked in from areas outside of our region. $3.3 billion. It's amazing when you think about it. Can we afford to lose any more farm land? How about the farmers? But it isn't so hard to turn these figures around. Did you realize that if everyone in Tucson spent just $5 a week on locally grown food, we would generate $287 million dollars in local farm revenue for the area's farmers and ranchers. So often we think that we need big solutions to the big problems, but the truth is, a small personal effort can make all of the difference. If we start little by little, buying locally and eating seasonally, what would our world look like twenty years from now? What would we look like? Life is full of purposeful choices, and together can we create a society that can sustain itself.
Times like these are bringing change, and it is up to us how we respond to it. We can either stubbornly stick to our old habits, or we can alter our course just a little --as little as $5 a week!
Doing so would not only affect you, but also your family, your neighborhood, your city or country, and even the planet. I know that I am ready... are you?

Walking J Farms
Welcome to our farm. Walking J Farm is a diverse, sustainable farm nestled in the watershed of the Santa Cruz River Valley in southern Arizona - a true polyculture farm. The farm is run by my husband, Jim McManus, and myself, Tina Bartsch, our two young children, Maggie and Colm, and several hard working interns. We envision our farm as a self-sustaining entity feeding local families from communities in the area with farm fresh meat and produce. We also see our farm as an educational opportunity and model for diverse farming to all those interested in learning about living off their land and making a living from their land utilizing holistic farming methods. The health of our soils is the foundation of the health of our animals and plants. We manage our pastures with rotational grazing of our cow herd, pastured poultry, and pastured pork. We have been slowly rebuilding our soils in our 1.5 acre garden with compost, effective microorganisms and biodynamic gardening techniques.
You can buy our products in two different ways: retail or through a CSA share. You can buy retail (by the pound) from us at one of the farmer's markets we attend on a weekly basis or at the farm on Saturdays during our farm stand. You can also buy a community supported agricultural (CSA) share. CSA shares are a way for you to invest in a local farm and in return you receive local healthy humanely raised and slaughtered animals, and fresh, pesticide and residue free, produce. We look forward to sharing our products with you.
