Sub-Saharan Africa - test module on Food Dehydration

On July 6, Professor Donald Mercer, University of Guelph-Kemptville will initiate the first test of an IUFoST-supported food science module to participants primarily from Sub-Saharan Africa.  From time to time you have seen reference to the DE Task Force and our project to develop and ultimately present food science and technology mod.ules through distance education to people working in the food industry in sub-Saharan Africa.  Well, Don, who developed a set of modules in food dehydration, is leading  11 participants from industry from six different countries (Ethiopia, Nigeria, Mauritius, Bangladesh, Kenya and South Africa) in the food dehydration introductory module.  The module is being presented through 11 mentors located in the vicinity of the participants.  The four assignments will be completed by the end of August.  That will be followed by a thorough evaluation of the module itself but also of the procedures and process of presenting the module to the participants and the role of the mentors.   As an update on progress in getting modules on the nine subjects identified by the DE Task Force the following are complete: Food Dehydration, Packaging, and  Freezing.  The remaining six (Thermal Processing, Nutrition, Shelflife, Food Law, Food Safety, and Quality Control) are all in various stages of completion.  This project continues to be a high priority for IUFoST and IAFoST.

IUFoST Adhering Bodies-New Member Turkey

IUFoST is delighted to announce that Turkey has joined the global Union.

"The Association of Food Technology-Turkey, which is a membership-based organisation, was founded on July 08, 1973. The mission of the Association is to offer its members, as well as non-member scientists, researchers, and other food professionals, the opportunity to share knowledge in the field of food science and technology. Members join the Association to keep up-to-date on rapidly changing technologies, innovations and regulations; to learn about the latest findings in research; and to establish and maintain contacts outside of their individual areas of expertise. For the attainment of this purpose, the Association has published a bimonthly journal for 33 years.

The Association contributes to knowledge in these fields by holding national congresses and supporting the book publications in food science and technology. In all ten conferences and 31 books have been published with more than 400 participants attending the last congress in 2008. The Journal of Food (GIDA in Turkish), which has been published by the Association for 33 years, is the only food journal scanned by The Scientific and Technological Research Council of Turkey (TUBITAK) in the Republic of Turkey (TC). The abstracts of all articles that have been published in 33 years are present at the web page of the Association, (www.gidadernegi.org). Information on the Chamber of Food Engineers' Congress and the International Mycotoxin Congress can also be found on the Association's website

Creating New Foods: The Product Developer's Guide, was first published in 1999 and republished in 2001. The book has been extensively revised and updated, and is published here in full text; 100 searchable web pages, and eight Chapters for printing or download in Flashpaper format.

This book is a guide to the basic structure and activities of the Product Development Process - product strategy development, product design and process development, product commercialisation, product launch and evaluation. It is an introduction to food product development as practised in the company environment, designed so that people can build a general understanding as a basis for further study using the textbooks listed at the end of the book.

The book is designed for people starting to work in food product development in the food industry, and for students in an introductory food product development course. It features numerous think breaks, project breaks, and up-to-the-minute examples and case studies from industry, to widen the reader's knowledge of product development across the food industry - consumer, food service, industrial, primary agricultural/marine, and through the whole of the food chain.

The Institute's objectives include the fostering of education, and promotion of the understanding of foods. We hope that this book will contribute to that, and that it will encourage readers to work in this multidisciplinary, creative and ever-changing area of technology - Product Development.
IUFoST Academy Fellows in the News
Ismaili Serageldin Beirut Arab University (BAU) awarded Dr. Ismail Serageldin, Director of the Library of Alexandria and Fellow of the International Academy of Food Science and Technology (IAFoST),  an honorary doctoral degree, honoris causa, in Arts, at the annual graduation ceremony that was held at the Debbieh campus on Thursday, 25 June 2009. This is the second honorary degree granted by the BAU; the first one was granted to late Prime-minister of Lebanon, Rafiq El-Hariry in 1994.

It is worth mentioning that Dr. Serageldin holds 22 honorary doctoral degrees, the last one was granted to him by Université Laval in Quebec, Canada, in August 2008 and this will be the first honorary doctoral degree Dr. Serageldin receives from an Arab University.
