IUFoST -JAPAN  Food Safety and Security Symposium



September 2009 saw the opportunity for the IUFoST leadership to reaffirm and renew our long relationship with IUFoST founding member, Japan with the IUFoST-Japan Food Safety and Security Symposium, meetings with Japan industry and research institutes, with our colleagues in IUFoST Japan and with hands-on training in Cup-of-Noodle making.

The first paper of the symposium was given by Prof Seiichi Homma, the immediate past Commissioner of the Food Safety Commission, in the Cabinet Office of the Japanese government. He reminded us of Japan's high dependency on imported food, some 60% of its needs. Pressure was therefore on government both on food security, and on food safety, as improved methods of analysis lowered detection levels of pesticide residues and contaminants. Then Prof Takanori Mine, Director of Food Safety Research for ILSI Japan highlighted how Japanese consumers now needed to be kept better informed following the loss of confidence in the wake of the recycled milk scandal in Japan in 2000. Prof Toshio Shimizu explained the safety evaluation procedures for Functional foods, since their first recognition by Japan as FOSHU in 1991. Geoffrey Campbell-Platt gave a presentation on IUFoST's Global Role in Food Safety and Security. This stressed IUFoST's key strategic areas of food safety, illustrated by our recent expert panel meeting with the Chinese government in Beijing, and as stakeholders in WHO's Foodborne Disease Epidemiology Reference Group, FERG; food security, explaining our recent involvement with FAO and the UK Parliamentary Inquiry into food security; with our third key area of education, with distance learning, and the recent publication of our IUFoST textbook 'Food Science and Technology'. Pingfan Rao discussed the Chinese approach to improving food security for its very large and increasing population, while Chinese consumers are demanding improvement in food safety. Korea, like Japan, explained Cherl-Ho Lee, is a major importer of its staple cereal foods, and was therefore particularly vulnerable to recent world food shortages, and consequent price rises. By contrast, as Rickey Yada discussed, Canada was well able to meet its own basic food needs, and is a major world exporter of cereals, but it is not immune from food safety worries, as its' recent Listeria in cooked meats outbreak demonstrated. The following lively discussion confirmed again that more issues unite than divide our modern, global world, and that IUFoST has a major role to play in bringing together the best global scientific expertise to help resolve these challenges.

 IUFoST breaks into the Blogosphere
 IUFoST Is pleased to announce that Dr. Rickey Yada will be our first blogger

This month the Union is launching a blog offering our members an opportunity to get involved and to engage in discussion about some of the important issues in food science and technology. We are excited that Dr. Yada agreed to be our first blogger.
Dr. Yada is a Professor in the Department of Food Science, a Canada Research Chair in Food Protein Structure, and the Scientific Director of the Advanced Foods and Materials Network, Canada's national food and bio-materials research network. Dr. Yada is also  Chair-elect of the IUFoST Scientific Council.  He is the author of over 140 refereed journal publications and several book chapters.

Our first blog focusses on recent activities in research and technology at the nanoscale level in food science. Dr. Yada poses two questions "How should nanoscience or nanotechnology be defined, i.e., using size limits, using a conceptual definition, or a combination of the two?  and
"Given the current interest in nanoscale research in food science and technology, what system(s), if any, should be taken by the academic, government, industry and public communities to meet the latter statement, i.e., benefit and safety?"

IUFoST Congress News and Call for Abstracts

The Scientific Programme is taking shape and will be truly representative of the Congress Theme "Food Science Solutions in our Evolving World". The call for papers commenced in June and abstracts for presentation as Oral Papers and Posters are pouring in. If you are still intending to submit an abstract, you have plenty of time as the closing date is 31 January 2010 but it may be a good idea not to leave it to the last minute.

As usual, there will be a number of keynote speakers and the Scientific Programme committee is busy compiling the final short list and has already issued some invites. Two keynote speakers who have already been confirmed are Sir David King and Professor Gebisa Ejeta.

IUFoST Distance Education Module Update
Successful completion of the first DE module from IUFoST

In 2002, then IUFoST President Walter Spiess had a vision - IUFoST should develop and present a distance education program suited for delivery to food industry employees with limited formal education.  Well, Walter has finally seen the future.
 
This summer Don Mercer, professor of food science from the University of Guelph, worked with seven mentors to present the introductory food dehydration module to eight participants. The mentors were faculty members from institutions of higher education in Ethiopia, Nigeria, Mauritius, Kenya and South Africa, and the participants were from local food companies in the respective locations. The educational backgrounds of the participants ranged from elementary education to those with technical degrees. Don developed four sessions around the information in the module and provided questions to test learnings. The alpha test for presenting material ended mid-September and the results are currently being evaluated. Preliminary returns of the evaluation forms indicate that the test was a resounding success.The Distance Education Task Force will continue to develop the modules. Don has already indicated he is willing to present the Intermediate Food Dehydration Module after fine tuning the process based on the evaluations of the test just completed.

IUFoST can be very proud of its commitment to education and furthering the world's commitment to provide food security to each and every one.

New Scientific Information Bulletin (SIB)
IUFoST Scientific Information Bulletin on Organic Food 

The IUFoST Scientific Council has approved the publication of its latest Scientific Information Bulletin (SIB), on "Organic Food". For a list of IUFoST SIBs and access to each, see http://www.iufost.org/reports_resources/bulletins/ 
Production of organic food requires the same involvement of professional food scientists and technologists and is subject to the same requirements of good manufacturing practice and food safety as the rest of the food industry, but is also subject to specific additional legal requirements as to cultivation, composition and labelling.  A comprehensive review has shown that there is no significant nutritional or health difference between organic food and that conventionally produced. However, organic food is likely to contain lower residues of agricultural chemicals.
