Pensiero Ristorante Announces New Executive Chef

Pensiero ChefMichael Pure, Owner of Margarita European Inn, has selected Christian Fantoni as the permanent Executive Chef of Pensiero Ristorante. Fantoni, a native of Bergamo, Italy, will replace the day-to-day contribution of restaurant consultant Alan Lake, creator of the well-received summer menu.

"Lake will remain on as a consultant to me," says Owner Michael Pure. "He will advise me and discuss new projects. Operations are under the watchful eye of General Manager Emlyn Thomas."

Pure notes that although the restaurant always served Italian food, Fantoni will be the first Italian chef in the restaurant's history, and with Fantoni on board he looks forward to elevating the restaurant to the standards established by Chef Peggy Ryan.
