The Importance of
Including Healthy Fats in Your Diet

Dietary fats such as those found in nuts, seeds, avocado, butter, cheese and olive oil promote the absorption of lycopene, alpha and beta-carotenes. These nutrients help prevent heart disease and cancer. In a 12-week study at Iowa State University conducted by Wendy White, associate professor of food science and nutrition, participants between the ages of 19 and 28 were placed into different groups. The first group ate salads of romaine lettuce, spinach, cherry tomatoes and carrots topped with an Italian dressing containing 0 grams of canola oil while the other groups had 6 and 28 grams of oil, respectively. Hourly blood samples were collected for eleven hours after each meal. The lab tests indicated that esseatially NO beta-carotene was absorbed by those eating salads with fat-free dressing. In contrast, lycopene, beta and alpha-carotines were absorbed when low-fat and full fat dressings were eaten.
Important fat-soluble vitamins such as Vitamins A, D, E and K can only be absorbed when eating a diet containing fats. And a well balanced diet with nutritious fats helps reduce the cravings for carbohydrate and sugar laden foods which are the main contributors to the epidemic of obesity. Everyone should avoid processed oils and fried foods. In sum,
US dietary guidelines support a diet moderate in fat. A healthy diet includes fats used in conjunction with fruits, vegetables, grains and whote meats.

Understanding Glycemic Index

The Center Welcomes Allergy and Asthma Specialist, Alfred Covington, M.D. 
Dr. Alfred Covington is an allergy, asthma and immunology specialist with 20 years experience treating patients of all ages. He has been practicing in North Carolina for 15 years and has offices in Rocky Mount and Clayton. He is excited to be adding an office in Chapel Hill at the Center.
Dr. Covington's approach to patient care involves careful listening, partnership building and development of treatment plans that reflect patient desires and concerns. He recognizes the importance of providing patients with options as there are many ways to treat a single condition. He accepts most major insurance plans and offers special rates for those without insurance.
Dr. Covington's special interests include treating both pediatric and adult hay fever, sinus problems, asthma, food allergies, hives and swelling, eczema, anaphylaxis and bee and fire ant allergies.
Dr. Covington received his undergraduate degree from Brown University in biology and his medical degree from The Johns Hopkins School of Medicine. He did a basic science research fellowship at the Wilmer Eye Institute at The Johns Hopkins Hospital. He completed his allergy, asthma and immunology fellowship at Howard Hospital, where he also served as director of the Adult Allergy Clinic and was an assistant clinical professor in the Allergy Division. While at Howard University Hospital, Dr. Covington conducted research on asthma in inner city children.
His wife, Cindy, and their four children live in Chapel Hill.

Chronic and Recurrent Pain

Some individuals with chronic and recurrent pain have accumulated various toxins from multiple sources, often over a lifetime. These toxic substances (including metals, solvents, and biochemical products from imbalanced flora or low grade infections) are more of a problem now than ever before because of greater environmental pollution, depleted nutrients in the food supply, and increased life stress in general. Increased toxins and decreased nutrients impair the functioning of nerves and muscles, trigger and throw off the inflammatory and immune responses, and ultimately overwhelm the body's detoxification system itself. This leads to chronic tender points in muscles, ligaments and bone, and, in some cases, the onset of debilitating diseases such as arthritis, fibromyalgia, or chronic fatigue.
As a physician specializing in pain management, I help my patients develop treatments customized to detoxify the body of what is burdening it. This likely involves some lab testing at some point (not all of which is covered by insurance) and definitely involves dietary and lifestyle changes, along with nutritional supplementation and occasional medication, sometimes with several rounds of "cleansing" with different agents. My approach may also involve taking a hard look at what is really bothering us in our lives and how we handle external psychosocial stress and internal psychospiritual stress.

Massage and Health Conditions

Clinical research has shown that massage therapy has benefits for many serious medical conditions. It alleviates pain and aids in the healing process. Massage has been found to be especially effective for patients with low back pain, breast cancer, other kinds of cancer, heart bypass surgery, anxiety, migraines, carpal tunnel, and hypertension.
A review of more than a dozen studies concluded that massage therapy helps relieve depression and anxiety by affecting the body's biochemistry. Researchers at the University of Miami School of Medicine reviewed studies that measured the stress hormone cortisol in participants before and immediately after massage and found that the therapy lowered levels by up to 53 percent. Massage also increased serotonin and dopamine, which are both neurotransmitters that help reduce depression.
Research indicates that massage can help boost immune system strength by increasing the activity level of the body's natural "killer T cells," which fight off tumors and viruses.
Massage therapy benefits that are applicable to sufferers of any kind of pain include the stimulation of endorphin production in the brain and the encouragement of patient confidence in improving their condition.
